Orange Curd Recipe
Ingredients
2 eggs
2 egg yolks
1/2 cup (100g) granulated sugar
zest of 1 large orange
5 tsp (12g) cornstarch
1 cup (250ml) fresh orange juice
2 tbsp. (25g) unsalted butter
Instructions
1. In a medium saucepan, combine egg yolks, eggs, sugar, orange zest, juice and cornstarch. Cook over medium heat, constantly stirring, until the mixture thickens.
2. Remove the pan from the heat. Add the butter into the mixture and stir in until melted and incorporated.
3. Pour the curd into a jar or bowl and cover with plastic wrap, making sure it touches the surface of the cream. Cool the curd at room temperature until barely warm, then refrigerate until set, about 3 hours. The curd will continue to thicken as it cools.
4. Store curd in an airtight container in the refrigerator for up to 2 weeks.
