Orange Thumbprint Cookies
Ingredients
FOR THE SHORTBREAD COOKIES:
180g unsalted butter, softened
100g powdered sugar
1 tsp (5g) vanilla extract
1 tbsp. (15 ml) orange juice
1 tsp (5g) orange zest
1 egg
300g all-purpose flour
7g baking powder
FOR THE FILLING:
100g orange curd

INSTRUCTIONS
1. Preheat the oven to 350°F (180°C). Line baking sheets with parchment paper.
2. Add the butter and powdered sugar to a large bowl and beat together until light in color and fluffy, about 2-3 minutes. Add the egg, orange juice, orange zest and vanilla extract, mix until well incorporated.
3. Then add flour and baking powder, mix until incorporated and dough is formed. Wrap dough with plastic wrap and chill for 2 hours.
4. Take out of the fridge and scrape about 1 tbsp. of cookie dough and roll into balls. Place the balls on the parchment-lined cookie sheets, spaced a few inches apart.
5. Make a deep indentation in the center of each ball with your finger or a wooden spoon.
6. Fill each cookie with 1/2 teaspoon of orange curd. You can find my recipe for orange curd here:
7. Bake for about 12-15 minutes, or until the bottoms are just lightly brown. Don't over bake the cookies - it makes them dry and hard.
8. Let cookies cool on baking sheet 5 minutes, then transfer to cooling rack to cool completely. Keep in an airtight container in the fridge for up to 5 days. Bon Appétit!
