I made oreo macarons with one egg.
Actually, I tried it for the first time and
it was a new experience for me, too💕
I made this recipe for beginners
because if you fail, you can reduce
waste of ingredients. 👏🏻👏🏻

[Shell]
egg white 40g
sugar 38g
almond flour 46g
powdered sugar 42g
[Filling]
syrup 시럽 - water 6-7g, sugar 16g
1 egg yolk (18g)
vanilla bean paste 1/2t
unsalted butter 70g
oreo powder 20g
oreo crumb 5g

1. What is oven shower..??
- The oven-shower is to wait 2-3 minutes without removing the tray in the oven after baking. (with open the oven door)
2. How to dry in the oven..?? (high temp.)
- 1st preheating - turn off - put the tray in to the oven (at this time the temperature drops to 90-100℃) - 2nd preheating - start to dry, until the temperature reaches 120℃ again (with open the oven door) - close the door and bake - oven shower
Look at the subtitles in the videos, there is detailed temperature.
3. What is the baking mat's name..??
- This is called a teflon sheet. reusable.
4. How long do you whisk meringue or do macaronage with mixer..??
- It's not important how long I did.
Because we have different machines and environment..!
You should check the cocsistency of meringue or mixture frequently.
5. What kind of colors do you use?
- Chefmaster liquid colors
You can get it on 'Amazon.com'

8. What ia your oven and type..?
- My ovens are UNOX 135 and convection type.
9. Where can I get the templetes..?
- I made all templetes myself and I am not
sharing now.. Sorry..! 🙏🏻🙏🏻
10. Do you left or bake immediately..?
- As I already explained, I do not leave it because I am drying in the oven at high temperatures for 2-3min.
It is a very useful and convenient tip to reduce the time required.
Also you can get shiny and smooth shells.
11. What kind of eggs do you use? fresh eggs or aged eggs?
- I usually use fresh eggs. But' It doesn't matter what kind of eggs you use.

on my seventh attempt at macarons, i tried this recipe. this is the first time that the whole batch came out p e r f e c t. the feet is nice and dainty, top is smooth, and no hollow shell!!! i was so happy i could cry! thank you sugar bean!

This is a little random, but I love the way that you mixed both colors in the same bowl 🥰 Normally, I see people mixing in a bunch of different bowls and I can’t help but feel that it’s a little over-the-top

I really love this! I don’t have a big enough oven for many macarons and in quarantine I’m the only one eating all the stuff I bake so this is super useful... and I don’t know how to scale down macaron recipes 😅

Thank you - your recipe and method is the most successful of all that I've tried! All of my macarons have feet now and they have minimal to almost no hollow shells (still experimenting with my regular oven - I don't have a convection oven). I'm so happy ~ 😁

@@sweetk2456 They'll take longer to bake in a conventional oven, as much as 5 minutes more. Even my convection oven takes 3 minutes longer than for Sugar Bean's high-end commercial convection oven. You'll just have to test for your oven to find out the best baking length. But maybe 'Mona's sick of your BS' has additional or different advice.

Perfect Recipe. It works! I dried it outside for 30 mins then dry it in the oven at 100C for 3 mins with the door open. I put 150C for 14 mins. Since my oven is small and it's temperature isn't always exact. P.S. This is my first time. No Hallow shell and Has Feet.

제 레시피 양이 많으면 같은 비율대로 줄여서 절반, 혹은 3분의1 이런식으로 조절하심 되는데요 😉😉❤

thank you so much!!! i'm gonna try this soon, my oven is not fan/convection, its gas and i absolutely hate it, bc everytime i make macs, even tho i leave the door slightly open they dont rise and cook well. this recipe is great for making macarons for cake decorations since its a small batch. great video quality as always❤❤

soo beautiful!! I've tried so many of your recipes lol, I finally made a batch according to this one where the inside looks just as full as yours (no hollowness at al!) BUT it did not look as pretty and smooth as yours from the outside..I'm suspecting either there wasn't enough egg whites (my 1 egg had about 35g) or the egg/sugar mixture got a tad bit too hot, but I'm almost there! You are GOALS

When you're done piping the macaron, do you let it sit out for a while? Because a lot of recipes I've seen said if you don't do that they won't rise correctly. I just want to make sure I'll do your recipe correctly.

She does it differently. No sitting out. They go directly from piping into the preheated 120C oven. The work she's doing is, if not revolutionary, at least evolutionary, and saves a ton of time.

Jessica Price the technique she employs is a standard technique taught in French Culinary school for Italian and Swiss meringue based macarons. However she has done a great service to home cooks because ,although she has a business, she has shared her secrets as to how to do it if you have only one oven and especially the types of home ovens we have in Japan ,now I see in Korean also, which are small, multi- tasking and air/ convection so burn hotter. She has two ovens . She is a true star and to date, I have found her techniques are working for many of my students who requested an on- line video to watch.

I want to start off by saying I love this channel! I’ve watched many of these videos multiple times. Your talent is amazing and I love the soothing effect of your videos. Edit: I got the meringue to work perfectly but now I’m wondering if I beat it too stiff. When I went to do the macaronage, the batter was too thick even after a long time of pressing the air bubbles. Will adding more egg white work? Did I over whip the meringue. I was inspired by you to try to make one of these recipes. Everything was good until I got to soft peaks. While I was working up to stiff peaks my meringue collapsed into a hard glue that would not whip up. It even begun to form a hard sugar crust on top. What did I do wrong? I am thinking that I mixed too long and the meringue solidified when the air collapsed.

The sugar ratios are very important. And she doesn't use too much sugar. If your macs are too sweet then use less sugar in your fillings.

Hi, I tried making macarons first time using your recipe. I wasn't sure I will succeed in first try and I didn't succeed 😅 I don't know what went wrong although I followed your recipe step by step. When I tried mixing meringue and dry ingredients, macaronage became hard. I thought it will become foldable like in the video if I tried mixing more but it didn't. The mixture becomes harder. In the end I gave up mixing and just piped them on baking mat. After I baked them they looked like macarons but there are cracks in the top and they are more similar to cookies but they are edible. I don't think my macarons contains much sugar and sugar ratio is very important to the result 😅😅😅💜

Macarons require a specific ratio of sugar to the almond flour and egg whites. If you lower the sugar they won't turn out right. If the result is too sweet for you, then use less sugar in your fillings. And Sugar Bean is right - hers don't use too much sugar.

Your macs always come out beautifully. After you do the oven drying, the tray stays in the oven while the oven heats up? When do you start timing them the cooking time? Ty

The trays stay in the oven, yes. The cooking time begins when she turns up the heat to baking temperature. However, I can't do it that way as I don't have a high-end commercial oven as Sugar Bean does. I dry in the oven for 2 minutes with the door closed and then take the trays out. I turn up the heat, wait until it reaches baking temp, and then put the trays back in the oven for 19 minutes. If Sugar Bean's way doesn't work for you, you might try mine.

It's the Swiss method of making meringue. You can look it up. It makes for a more stable, dense, shiny, and fluffy meringue.

I admire your confidence and your meticulous methodology. I have watched over 30 macaron RU-vid videos and tried about 5 - 6 recipes. Unlike other videos, you show all of your shells not just a select few best ones. I have decided to follow your method. However, I believe the hand mixer you use is a Korean brand which I cannot find on Amazon (I live in Pittsburgh, US), so I ordered a 9-speed Cuisinart hand mixer with 3 low speed. Can you tell me what brand hand mixer you use and if it can be purchased on Amazon? I also ordered Teflon sheets, 16 inch piping bags (the ones I currently use is 12 inch), and bag sealing clips. I ready have ChefMaster gel colors. Are your piping bags are 16 inch or 18 inch? Thank you very much in advance. I will report back once I receive all my orders and try your recipe. I hope you can answer my questions so that I will not be trying blindly.

There's no Amazon in South Korea. I have no idea what brand hand mixer she uses. Nor do I think it makes a bit of difference. I have some Chinese brand myself. She says to whip the meringue at Mid Low followed by Mid, followed by Mid High. She also explains when to switch from one to the next and how to know when the meringue is ready. I'm sure yours has similar settings. Also, not all teflon sheets are made the same and most are no good at all. I prefer silicon mats myself. Her recipe is so small that I'm fairly sure the 16-inch bags you ordered will be fine.

Another great video. Question: do you remove the cookies from the oven between the 2-3 minutes drying time then put back in when oven is up to full temperature? If not, is the heating up time included in the cooking time? Thank you.

No, they stay in the entire time until the baking process is finished. "If not, is the heating up time included in the cooking time?" Yes, she turns the temp to 145C and the 13-14 minutes counting begins. However, it takes my oven 18 minutes to bake. It takes 3.5 minutes just to build to 145C.

@@Cstylinn Well ... it's Sugar Bean's way. I just adapted it to my own oven. The macaron experts always say to 'know your oven' and what works for me might not work 100% for you. But it should give you some ideas in case it doesn't work. Good luck.

Use room temp eggs. The meringue comes more easily than if using cold eggs. Just bring them out of the refrigerator an hour before making macs. Or, if you forget, put them in a microwave for 10-15 seconds.
