You do realise saying something is my favourite dish doesn’t mean they’re stating it’s like a lasagna or something else, you could say a T-bone steak is my favourite dish or any cut of meat is my favourite dish! That doesn’t mean they’re saying it’s something other than what it is. I don’t know why u think it’s so funny or incorrect that they’ve said ossobuko is my favourite dish.. almost like you’re trying to make fun of them when they’re correct with what they’ve said yet you’ve tried to state it’s not a dish 😂 okay 👌

DUDE ! I spent over a decade working in the restaurant trades, I can cook and I can bake, and I know parchment cooking techniques. This thing here is absolutely awesome. Now I know what to do with all those discounted beef shanks I come across in the meat department. I'm going to do this one on my grill. Thanks for elevating my game man...full marks.😎

Yeah if it’s a fatty piece of meat. And you won’t get a sear like that using it straight to the pan dry. Oil gives it a good even crispy sear while putting it dry on the pan will just burn it or stick to the pan until it releases enough fat and water to just turn it gray. It doesn’t work like that
