Ingredients:
- 3 garlic cloves;
- 2 trouts;
- half a lemon;
- 200 g. canned peas;
- 7 leaves fresh mint;
- 20 g. melted butter;
- 2 tbsp. water;
- olive oil;
- salt and pepper.
Instructions:
Cut the garlic and lemon into thin slices. Make light cuts on each side of the fish and season with salt, olive oil and black pepper. Do the same on the inner part, where also put the garlic and lemon. Roast at 180C/356F for 25 minutes. Make the peas puree by adding the peas, the melted butter, 1 tsp. salt, ¼ tsp. black pepper and mint leaves in a blender and mix until a homogeneous mixture is obtained. If it is very thick, you can add 2 tbsp. water and blend again.
