COMPLETED KITCHEN BUILD VIDEO A FEW MONTHS LATER: • DIY Overland Kitchen B...
As I mentioned in my first video of 2020, I wanted to make some changes to my sleeping and cooking setup in my Subaru Forester. I've made some progress but I wanted to give things a quick test run to see how everything's working so far.
Join me as I poke around some National Forest land in western Oregon looking for a campsite along a river. My new build is not complete and I still have many details to tend to, but it's at a point where I can at least get back out and camp. I'll give you an overview of what I've come up with to improve my overlanding experience.

That new setup is awesome and very inspiring! Also the rushing water didn't negatively affect the audio to the point that it was bad, I think you chose a good spot.

@@softroadingthewest Your videos are better then many movies in cinema! Adventure, amazing views, humor, things to learn, sometimes a bit horror and action... :) But we know you are a perfectionist :p So if you are annoyed you could try some noise reduction filter in post. I don't know if it really helps, but for instance Audacity is a free tool with wich you could try to change the audio track.

Love the new setup and especially your minimalistic approach. That mesh panel with the fire extinguisher and first aid kit also caught my eye. Looking forward to seeing more!

Thanks! The panel has actually been there all along as the rear surface of my old "kitchen," though it was hard to see hidden behind my old cooler. It's proven very handy, and I have all my chargers mounted on the other side, so I'm going to incorporate it again in this new setup with sort of a base for the cooler to sit on.

Thanks, I've been practicing the handshake, hope I get it right when we meet. Actually I had always tent camped before, but that was wife-and-kids 3-days-in-one-campsite camping, so the setup and teardown of our large, typical dome tent was somewhat tolerable (though still a PITA). No way I could deal with that every night and every morning on the more "overland" style camping I do now, with a new campsite every night. I still hesitated on the Gazelle due to it being, you know, fabric. No matter the season here, your tent *always* ends up wet, and these days I'm always back on the move before it would ever have a chance to dry. The last thing I need is yet something else to deal with at home, but it's just soooo easy, it's almost fun to set it back up to dry when I get home.

Hello, from Great Smoky Mountains! fellow Forester owner here! Love the kitchen setup...I need to build one and that looks fantastic for my simple needs...I have the same inside sleep setup and it is tight for anything other than sleep. An awesome video as always! I’m on a budget too with a child and other commitments....thanks for sharing your special get away moments and affordable ideas! Being an IT worker, your videos inspire me to get away for much needed stress relief from work and cell service if only for one night sometimes. Very much appreciated!

Greetings, I’m a fellow Subaru Forester owner in Australia. Your set up looks amazing. I have a jayco camper I tow and believe me, it’s not as straight forward to set up as it would seem as an all in one unit. Yours looked very easy and quick.

Campsite was perfect. Love the kitchen build. As a Rubicon owner, it probably would have had the same issue until/unless lockers engaged depending on tires. Ignore any comments by the haters, you have a great setup.

That's a great looking setup. I am always a fan of the DIY. The campsite looked beautiful and your audio was just fine. I bet you never got tired of that rushing water sound. Awesome video, looking forward to the next one.

Liked the "Jeep would have made it on the first attempt" - not necessarily. I've seen people out there in Jeeps getting stuck because they think a lifted Wrangler with wide low profile street tires is so cool and a great offroad vehicle. Tires are half the rent out there. Of course a Subaru has the CVT problem and is not really a 4x4, but it's a decent offroad vehicle, at least for what you're doing with it. You don't need to spend the money for a heavy duty offroad rig if all you want to do is go down forest roads, explore and find nice spots to camp. It's not that you have to do the Rubicon trail - I won't and I do have a Wrangler because I love it, not because I need it where I go with my little camp trailer.

Hell yeah! Love the new tent, it’s cool to have a car camp set up, but it’s also cool to just be outside and sleep in a cozy space. Good for you! That first campsite though... 🏕

My usual approach: Basic gravel forest service roads, 23 psi. Terrain posing potential traction challenges, 18psi. Sand, 12 psi.

I was legitimately thrilled to see the drone footage I’m surprised you didn’t mention it? I am looking forward to seeing some more footage in the future. Nice to see The tent and kitchen improvements and I appreciate how your channel is not all expensive gear ads and has some humility and the ability to poke fun at yourself. D Vonehrlich I just wanted to subtly slip that drone footage in without making a fuss...I was already showing so much new stuff as it was. 😄 It’s only a little DJI Spark and I got it used off eBay so it was very affordable, but I’m really enjoying it and you’ll definitely be seeing more. Patreon...I don’t know. I struggle with the idea of asking people for money, but on the flip side I’d really love to be able to spend less time doing my “work” work to keep the bills paid and be able to devote more hours to shooting and editing videos more often, and/or be able to travel & film for more than a few days at a time. I dunno. I haven’t ruled it out completely. I need to take a closer look at how it all works. Thank you for the kind words and support. 🙂

Thanks! Two downsides of RTTs for me - aside from being prohibitively expensive for me at this time - are that you still can't stand up in one, and losing my roof storage. I won't go out without extra fuel on board, and taking it off the roof would mean some kind of custom rear bumper with swing outs to carry fuel, traction boards, etc...another huge expense. The GoFastCamper RTT is cleverly designed to also serve as a roof rack for some items, but I don't think you could carry a fuel can on it. The clamshell RTTs are nonetheless very attractive to me, and I do hope one day I can move up to the RTT experience...I do find it appealing. :-)

softroadingthewest Donald, how is the Gazelle in windy conditions? We are known as Windy Wellington down here and that would be my main concern with a cube shape tent. Oh, does the fly cover-up a good portion of the window space? Sorry for all the questions.

@@softroadingnewzealand5210 No problem! I've only had the one night and I didn't even stake the tent corners down it was so calm. But in the course of my research, what I saw was that a particularly strong gust in the right direction can cause a hub to pop inward (as if you're taking the tent down). But each hub has an attachment point so you can attach a guy line and stake it out...I suspect you really only need to do that on the windward side, if it's windy, plus staking down the tent itself. In the video I saw, the fellow then turned a leaf blower on the tent and battered it pretty good, but it didn't budge. For extra assurance in windy conditions, I might be inclined to park my car perpendicular to the wind and use it as a windbreak with the tent set up right next to the car instead of out to the rear as I did here. The fly doesn't block any side windows. The tent has "skylights" all the way around the roof, so if you don't need the fly, you can actually see out to the stars at night. Putting the fly on blocks that view. The nice thing about that skylight design is that the tent is always super well ventilated.

Hey man Jason from Maryland here Did something similar. Use that panel beside the right of the stove, treat the wood, or use wood appropriate, and doubles as a cutting surface, slide right into pan. And... Like BigMoe (below) said, Don't apologize for the natural sounds, let it ride.... Gotta say, after the stresses of work, at home on a daily basis, when I can't get out, I sleep in my room with a Bluetooth speaker playing river sounds, nature sounds, crickets, all aspects of the outdoors

2:54 I don't know what kind of gimbel or steadicam mount you got, but the trail footage is awesome! It makes you feel as like you're there on the ride. Great cinematography!

That's just the built-in stabilization of the GoPro Hero 7 Black, which is really a fantastic little camera. The image quality doesn't quite measure up to my mirrorless Fuji, but it allows me to capture stuff I would never be able to with my big camera. The GoPro actually belongs to Colin, but he doesn't use it much these days and he lets me cart it around with me on excursions, fortunately. :-) I probably should get my own one of these days. :-)

Yep, adding drone footage was also on my goal list for this year. I got a used DJI Spark off eBay, it was quite affordable that way and has worked out very well so far! Thanks for watching!

Ruth Dahlen Me too, always enjoy seeing what people are making on the trail. I had someone recently suggest that many people don’t like the cooking segments common in offroad/overland videos, so I was inspired to add the skip assist. 😄 You should totally integrate some cooking segments into Erik’s videos! You nicely upgraded your setup, well done ! I like the tent that create a tiny "room" in the middle of the wild and the fact that you are still able to sleep in the car. I'm very jealous of your stove, it looks like high end / good quality product. We miss that in Europe and especially in France. But yes, dual burner is the way to go ! Your campspot location reminds me of one we choosed in Norway with Lizanne. It was a few meters from a waterfall and we thought it will be fun and "refreshing". We stayed 3 nights there because it just keeped raining and raining. Worst mistake ever ! the sound of the waterfall wasn't refreshing at all and we both ended up crazy ! Never again !

ALNSM OVERLAND Yes, I got very lucky on the stove, it is much nicer than what I normally would have looked at and is probably even a little too big for my compact rig but it was too good of a deal to pass up. I don’t think I’ll ever need to buy another camp stove again for the rest of my days. 😄 That’s hilarious about the waterfall noise driving you crazy. 😂 I also didn’t like the fact that a car could drive up while I was sleeping and it probably wouldn’t wake me up masked by the river noise. I will think twice before camping again in a spot like this. 😏

I don't drink much beer...usually only on camping trips, and I'll just pick up one can per night of camping. So I don't have much opportunity to form strong opinions. Guinness is actually far from my favorite, I think some of the local micro stouts are better, but it was on sale at my grocery store and I am nothing if not frugal. :-) I would say my consistent favorite is McMenamin's Terminator Stout which I think you can only get on tap at McMenamin's locations in the PNW. Nothing I buy in cans ever seems to measure up. Stouts aside, I otherwise love hoppy, ultra-bitter IPAs. :-) I'll keep an eye out for Left Hand Brewing!

@@softroadingthewest Can't say I've had any of McMenamin's stuff but I agree on tap is always superior for stouts! I'll keep an eye out if I'm in the area. For Left Hand I can recommend their Nitro variety pack, you should be able to find it at craftier retailers.

Great set up bro! I can’t wait till you finish the kitchen set up. How’s that tent? I haven’t researched that tent yet. Kinda iffy about it specially with strong wind. We do have a Marmot tent which we can set up in 10 minutes and the aerodynamics is great.

It's very well made. I'll certainly go into more detail about it in a future video, but I'm very impressed by the build, the quality of the materials, and how well thought out everything is. It comes with a full suite of stakes and guy lines and from what I've seen watching other people's videos, it should be up to the task of any weather I would typically encounter. I've got the platform in the car as a fallback if push ever came to shove, so to speak. :-)

Another great video. I'm semi-retired and not overly stressed but your videos have a real peaceful effect. Why a grain free meal? Are you allergic to gluten or something? The meal looked great. Also what is the brand of the cooler, and how is it working out? I have a "old" Coleman metal wrapped cooler that could use replacing. Thanks.

I have no allergies, I just feel immensely better when I avoid rice, wheat, and other grains. I'm not 100% grain-free. I can't resist a pizza, burger, or donut from time to time. But I aim for 75% grain free...digestion is much more comfortable in general yet I don't feel deprived as I would if I cut it out entirely. I'll cover the cooler in more detail when I do the final kitchen build video but the brand is Snowball, some kind of Chinese Yeti knockoff. What was intriguing about this model was that despite a much lower price, it had FAR better (and believably legit) reviews than the comparably sized Yeti (Roadie 20) which is riddled with negative reviews on Amazon. I was entirely satisfied with the performance, especially compared to the cheap little afternoon soda hauler I was using before. This trip was just an overnighter but I left the cooler in the car all week and my ice packs were still partially frozen four days later. Granted, it's winter and it was not warm outside. We'll see how it goes this summer but I'm feeling pretty good about how this is going to work.

Awesome video. It was very informative.. just moved to Las Vegas, and about ready to purchase a Forester. Afterward, I will begin securing what I need for 1-2 night getaways. I think you've changed my mind about the tent versus the rooftop camper. I can probably secure what I need at 1/3 the price. Keep up the great work.

Love the style and simplicity of your videos. I sleep in my 80 series Land Cruiser but that kind of tent looks pretty nice. I searched for it while watching your video and saw Target online (search it) has that same one for $186.89! 33% off. Might help anyone thinking about getting it.

Just found your channel and am really enjoying it. Your video quality is great! I was intrigued with your grain free meal because I try to eat grain free also then I noticed you had oatmeal. I love oatmeal but I have been avoiding it. I’m curious about your thinking on that?

I aim for about 75% grain free, I feel better and digest better in general, but don't feel deprived either because I occasionally allow myself a pizza or a burger. In general I seem to digest oatmeal better than wheat or rice, but then it's usually a pretty small quantity of oats anyway, and I don't eat it frequently, only when camping, and even then, not every morning. The other dietary adjustment I've found that has had a significantly positive impact on both my digestion and my overall well-being is greatly reducing processed sugar intake. I eat very few sweets and I don't add sugar to my food or coffee. Obviously those store-bought oatmeal cups are sweetened, but that would have been the only sugar I ate that day. Again, it's a 75% thing. It's pretty easy to avoid sugar 75% of the time. I feel much better in general but still enjoy life with the occasional donut. :-)

Great video. One thing you might consider is a backpacking hammock, like those sold by Warbonnet, Amok, or Hammock Gear. You are almost always in a wooded area, so finding two trees (or even one tree plus your roof rack) is easy. You don't have to prepare a site, it's totally LNT, and there is never any issue with levelness or drainage. The hammock has an integrated bug net, add a tarp and you're good to go 3 seasons and even 4 with skill. I gave up on sleeping on the ground and am now 100% hammock based when backpacking. It's awesome, as long as you are mindful of insulation and weather protection. Thanks for sharing!

Nice video and good practical information. I agree with many others about how nice it is to watch camping / over landing done on a budget. I'm in the same boat and you mentioned a few things that have been on my mind as well. I drive and camp out of a Subaru Outback and a few years ago decided no more tent camping as well. Have been sleeping in the Outback and it has been okay. But the last few months have been seriously considering a roof top tent. You literally have read my mind about this. I'm sure they are nice but do I really want to spend $1500 - $3500 on a roof top tent? No, I really don't. I am going to check into the Gazelle. It does seem to solve the issue I always had with setting up and taking down a tent. So thanks for that info. I'm a new subscriber to your channel and have appreciated the videos you have been sharing. Practical, common sense advice is always the hardest to find. Thanks for sharing yours. Keep up the great work. I look forward to more. Oh and by the way, I'm getting one of those 5lb. propane tanks. Already clicked on the link!

It is also refreshing to see someone who is genuine and relatable. You that the average guy with a completely reasonable car can have fun too. I actually used to drive that exact car until I was in an accident and totaled it. I replaced it with a 4th gen 4Runner so I could "really get out there and explore." I lifted it, got KO2's, (you don't need rock sliders in FL) but to be honest, I explored 10 times more with my Forester than I have with the Toyota. As I consider rehoming the 4Runner for something better on gas, you're really making me want a Forester again.

Very nice kitchen setup, even its not yet finished..... I do have a double range Woods (a Canadian Outdoor gear brand) stove but I start to hate keeping those empty, small bbq propane cans. I should get a refillable tank like your.

I loved the Jeep comment about getting stuck-ish… as a Jeep owner, I gotta say that sometimes the rig can make it TOO easy and take some of the fun out of off-roading. As a subaru owner, I enjoy the extra challenge.

Roof top tents are nice, but I think you made the right choice. Having all that weight up high on a daily driver isn’t awesome. And RTTs are a pain in the butt to get off/on the car. I have a RTT but it’s mounted to my camper trailer so I don’t have to deal with it when I’m not camping. If you do end up going that route at some point, look into Tuff Stuff. Very affordable compared to the others.

Check out a Cherokee Trailhawk. 2 speed xfer case, locking rear diff all stock. Skid plates also stock. Check out fearless trailhawk for what it can do offroad. the v6 sucks on gas but the newer ones have a 2.0 turbo option which might be better.

That Gazelle tent is the same price as any decent quality tent. I paid 200 more for my MSR Hubba tent with a unipole system and i dont regret it.

I have nothing against ground tents, think they are under rated. I will say if you wanted a roof top the one by smitty built has good reviews and is not crazy expensive. Yeah its not a hard shell, but it still goes up in about the same time as your ground tent if not faster... so there is that. And you could probably just build a cap to go over it if it was that important to you.

I use a 10 x 10 canopy with a clip on tent form ozark. It take me about 10 to 15 minutes to sit up. Dennis from Delaware

Best flame control of any propane stove I've ever used. Granted, I think I've only used two propane stoves in the past, plus my butane stove. But I could get the flame surprisingly low with more precision than my previous propane stoves. And on full power it's an insane blast...more powerful than the gas stove in my house. Ooh...Sir William Goes...I've seen some of your vids, pretty sure I watched a few of yours in the process of researching tents. You're the one who tried both the Coleman AND the Gazelle, right? Do you have the T3 or T4? I was initially thinking I wanted the T4 in order to have more standing height and enough floor space to set up a cot and a small table/chair work area, but ultimately I'm glad I went with the T3...it's roomier than I anticipated and already pretty big and heavy in my small car. Can only stand fully upright in the very center - with the attic net removed - but really that's all I need, one spot to be able to stand up without stooping. And I could still easily set up a little work area in addition to my cot. Anyway, thanks for watching!
