I found a cute little stall at the Crossroads Market selling British Pies, the Cornish pasty caught my eye immediately! I tried to run away but I kept thinking about it, so I came back and bought a bunch of stuff to try. After finding out that the owners were from Oxford, and Baked in the Britton lands I had to get a taste of several items.

Cornish pasties have a meat and vegetable filling, it is a Bedfordshire clanger that has savoury at one end and sweet at the other.

Yeah, savoury jelly isn't really popular in Australia. Not that I'm aware of anyway. I don't mind a little in a British pork pie, but I think they're best when the gap between meat and pastry only allows for a small amount. Personally, I don't like sweet jelly/jello either. Even with the sugar and fruit flavour, it still smells like hooves to me.

It is hooves! They must have a process here that gets rid of the smell in the sweet kind, I have never had the hoof experience. 😆

Ginsters do a nice Cornish pasties. Not sure they sell them in Canada though. The one your eating looks well made and baked. I think the idea of the Cornish Pastie originally was the crimp edge part of the cornish pastie was to be thrown away. My understanding is tin miners would then avoid tin poisoning and keep the food clean. Very good bakery you went to. I would love to know what Canadians like for snacking and eating.Not sure about the Cornish pasties you ate but did it have potato,swede and carrot in it aswell.?

@colinsmith1288 this one was just beef and onions. And you're right, the miners would throw away the dirty coal covered crust so they didn't get sick.

The pork pie pastry should be thinner and crisper. I do like the gelatin (I'm from the UK) but not a lot of it. You really want to try a Melton Mowbray pork pie for a better experience. I've also received a "frozen, bake at home" pork pie kit (where you fill it with the liquid yourself and bake it in the oven) in the post before and that was a good option if you want to try a really fresh version. Not sure how long the shipping would take to your location though, or how expensive it would be.

Aspic. Look it up. Aspics were more common in the 1800s up until the 1970s. Jello molds were a form of aspic although most were not sweet or fruit flavored.

Maybe you didn't make it all the way to the end, or maybe you were just listening. I have a few images in the video of grotesque aspic, I'm very familiar with the history, and I'm sure people in North America still think it's weird and gross to have savory jellies.

@@TalentlessCooking Savoury jelly is weird and gross, it is pork pies in he UK... to fill in the gap between the meat which shrinks during cooking and the pastry... and is most foul. No one has eaten things set in savoury jelly since Victorian /Edwardian times..

A pig or calf's head brawn recipe looks fun. If you a have couple of days to prepare it. Also known as "Head Cheese". Remembering that gelatine used to be made from boiling up the bones, skin and tendons of pigs or cows.

A Cornish pasty should have beef skirt, onion, potato and swede (rudabaga). Plus lots of black or white pepper. If pork pie doesn’t have gelatine then it isn’t a pork pie. That hot water pastry look thicker than normal, and under cooked. Calling it a coffin is an insult.

Britainland's pork pies are terrible beasts from Georgian times..when people only ate meat, bread / carbs and ale. And didn't know what caused heart attacks.
