Yes oxtails come from a steer’s tail-a well exercised muscle, marbled with fat. The segments are vertebrae so they have lots of iron-rich marrow as well.
Ingredients:
Beef tail
Onions - 1 head
Garlic -7-8 cloves
Olive oil - 2 tbsp
Salt, Pepper - 1 tsp
Thyme - a handful
