Before buying a freeze dryer, perhaps research to find out more about the downside of the machine; some people have problems with their machine and it's big and heavy and hard to return!
When trying to decide what to freeze dry you can start by asking why.
Start by asking yourself this question. Why are you freeze drying food? Knowing this should help you decide what you should freeze dry first.
I'm freeze drying because:
Just to freeze dry leftovers?
You want to make your own food for camping/backpacking?
For if/when the SHTF?
For a short term emergency?
You have your own garden and want to freeze dry the food?
You love Costco but don't have a family of 6?
You are good at finding the food sales but only have 1 freezer?
When you cook homemade chili just for yourself you make 10 gallons? Because you have 3 full freezers and are worried about power outages?
If I knew then what I know now, I would have freeze dried things in a different order. Or maybe not, because I started freeze drying because we had 3 full freezers, I was thinking of getting another one, and I decided I should buy a walk-in freezer instead. I started looking into walk-ins and realized they were expensive to buy (even used ones) AND expensive to own and operate. Then I found out Harvest Right was making home sized freeze dryers. One of my first thoughts was "I like Mountain House!" I have used their food for backpacking almost 45 years and we even kept some in our travel trailer, for just in case.
Freeze dried food will stay fresh for many years and be ready and waiting when you need it.
We do videos showing how we are using our Harvest Right Freeze Dryer to freeze dry food for long term storage. (We have the medium size machine that we got in August of 2017) We talk about how to load and unload the freeze dryer, how to know if the food is dry, is it better to freeze dry raw food or cooked food, and do a few taste tests. Freeze dried food is also great for prepping or just for camping and snacking!

Thank you for the kind words! I will try to make a super short version of this just showing the bottom line of testing. Simply put one in a jar and wait a couple days - was all the oxygen absorbed? Done!

This is all so interesting and informative! Thank you! Until i received my big vacuum sealer, i would place my open packages of oxygen absorbers in a canning jar with a fresh/unused lid. As small as i could use to fit the remaining absorbers. It will only take a few minutes and it would pull the lid down securely (pop), with a ring over it all to secure. Cheers!

Glass jars and metal lids definitely have the advantage over plastic when it comes to oxygen and moisture transmission!

Great video! How about testing a series of oxygen absorbers that have been left in "open air" for a set period of time? For example, leaving them out for 5 minute increments up to 30 and one at 45 and another at 1 hour. That way, you can take absorbers that have been exposed for each interval and see if they can still remove an expected amount of oxygen from the container (or bag). You would be able to use that data to determine an expected reseal number for your base absorbers. Since you mentioned you only like to reseal your O2 absorbers once in this video. But if you knew 45 minutes open air exposure of the absorber still maintained a 200cc O2 absorption, and if you keep the open bag time to 5 minutes or less you would know you can expect 8 reseals.

Excellent video. There is one question about the oxygen sensors that you have not discussed - that is the sensitivity of the sensors. In other words, what percentage of oxygen is needed for the sensor to change to blue? There WILL be an equilibrium point, where the number of molecules changing to blue is equal to the number of blue molecules changing back to pink. It is exactly the same as with pH test solutions. So the question becomes, what is the percentage? Is it 5% oxygen, 1% oxygen, 0.01% oxygen? It isn't really a concern, since we are just verifying that the absorbers are still active - more just a matter of curiosity. As an after-thought, at what oxygen level do the absorbers stop absorbing oxygen? Is the reaction reversible or one-way?

Excellent questions. I only have partial answers, and guesses based on observations. The percentage of oxygen needed for the sensor to change to blue is _very, very_ low, but I don't have a number. (I think I saw it in one of the manufacturers sites, but I don't know where it was - maybe somewhere in the 0.001 to 0.01% range?) I do know from our testing that the sensor does not turn back to pink until many hours after the total volume of oxygen has been removed. The oxygen absorbers most of us use contain iron powder (along with activated carbon and salt) which becomes iron oxide as it reacts to absorb the oxygen. I would consider it to be a non reversible reaction under normal conditions. (No practical method for our little packets) From PackFreshUSA website about oxygen absorbers - Product Information: . . . OAP's reduce oxygen levels to below .01%, effectively removing all oxygen. Vacuum sealing reduces oxygen levels to about 0.1%

Thank you for walking us through this entire process. I am confident I can now do this experiment on my own and may on some large oxygen absorbers I bought years ago. I had my doubts at the time if they were working as the bags of rice and dry beans I was trying to preserve didn't all seem to be sucking down like they should. Before I use them on the wheat berries I will want to test them. From now on I'll be buying from Pack Fresh USA!

@@SchoolReports Yikes! I have about 400 lbs of plain uncooked dry rice in 5 gallon buckets lined with mylar bags, large oxygen absorbers and heat sealed. The bucket have gamma lids on them. The dried beans are also uncooked and treated the same way. I have some canned and some freeze dried as well, but not anywhere near the amount in the 5 gallon buckets. They have been there for about 5 years (I think). We only have a medium freeze dryer, so cooking and freeze drying it all will take a very long time and will mean we can't be adding anything else to our pantry in the meantime. What is your advise for me?

You're probably just fine; I was just trying to say that I wouldn't trust (I have trust issues:) the moisture levels to be in a low enough range for storage when I buy something, without testing. A pretty easy test would be to take a sample and run it through the process. Example: Put 1000 grams on a tray, run the process, weigh it and find out how much it lost. I think that beans are good for storage as long as the moisture levels are below 10 or 12%. (Going by memory - I can't find the data right now, so I could be off by a couple % - could be higher?) I don't know the rice numbers; I'll have to research. One reason I chose to not store dry beans is that dry beans are not eatable. They must be cooked, and who knows if I'll have the ability to cook them when I need them. Cooked, freeze dried rice is good even while still dry.

I can't find that much of 10x absorbers on my online markets, do you buy it as a whole 1000 per order or 100x 10packages...I was thinking about if it's safe to buy in bulk and divide them in 10 and 15 per bag and seal them back 🤔

i see conflicting informations regarding the use of oxygen absorber for pet food. some say it will extend the shelf life, some say to avoid for high moisture high fat food it as it will caused the food to go rancid. i bought 15kg bag at discount and my cats consume about 4kg a month. im not trying extend the shelf life beyond the expiry date, just trying to keep the open bag stay fresh for few months without losing its aroma my cat food is 10% moisture and 15% fat. your thoughts?

Great question! I'll do my best, but I know nothing about cat food and its aroma. (I don't know if any of this will be helpful to you) Fifteen percent fat by itself is not really a problem; many commercially freeze dried food have more. The water is probably a bigger issue. The problem (and perhaps part of the reason for the conflicting info - that and peoples misunderstanding about rancidity) is that they are two very different issues. The relatively high moisture content puts food (cat or otherwise) at high risk of molds and other issues including botulism when in an oxygen free environment, but the fat will oxidize and go rancid without the oxygen absorber. This is why we are removing the water during the freeze drying process then add the oxygen absorber. No water activity for molds or other pathogens and no oxygen to support the process of rancidity. Remember air is not 100% oxygen so putting the jar under water and opening it won’t fill with water because nitrogen and other components of air will still be present.

Yes. The opening under water after vacuuming the jar, is precisely to show that there is still air, that it's not a full vacuum like people think, not for after using an oxygen absorber.
