I'm Cantonese and I grew up eating steamed whole fish with ginger and scallions. I love this take on the dish: 1.) en papillote with wine, which is gentler than steaming directly and with wine and oil creates an amazing broth, which is also less cleanup and allows you to press down on the fish to check if it's done without disturbing the steaming, and 2.) blanching the ginger and pouring it along with the scented water over the scallion garnish. The thing I do differently is create a sauce out of soy sauce, sesame oil, olive oil, sugar, oyster sauce, shaoxing wine, and rice vinegar, which I spoon over the fish/broth. Marco is really a genius

I was abducted by a huge flounder once. Very verbose but quite well travelled. At the end of the day I was never hurt but I did have to sit with him through a lot of sunsets and listen to a lot of stories, not a few of which got a little long in the tooth if you don't mind me saying so. Strangely I sometimes miss those days now, when I sit on the beach alone with a glass of cold white wine and think things over. Knowing he is probably out there, somewhere - cruising along with that one mean eye that the maori human bone fish-hooks left untouched, oozing strange, fishy authority upon an unsuspecting world. One Hell of a flounder - as flounders go.

Spring onions and gingers go and steam with the fish in classical Chinese steam sea bass in which case the freshness of the garnish goes into the fish. It's sensational.

I love fish in Chinese restaurants, and this basically looks exactly the sea bass that my mother loves ordering when eating there; at least ingredient-wise it seems identical, though I don't think they do it en papillote. By the way, Knorr-whoring aside, I think Marco is total top class. Love watching his videos online... much more pleasing to watch and listen to than Ramsay, and the man is full of cooking knowledge.

I'm disappointed that he didn't make a seasoning paste for the bass with a knorr fish stock cube and a little bit of olive oil. I guess that it's his choice though

it's not only about being italian... he's one of the world's bests because he travels around taking inspirations from many different cultures and methods of cooking, then he simply creates these simple yet extraordinary dishes that the common can make. This has Asian influence, but yet such finesse. He is the best in the world IMO.

This is a dish I assume inspired by Chinese cuisine. If you guys want to recreate the dish I suggest not buying regular soy sauce, but a version called "seasoned soy sauce for seafood" 蒸鱼豉油, its gonna compliment the fish better.

clean the fish. put ginger slice inside tummy, ginger strips and greenonion on top of fish, STEAM, yes steam for 15-20min uncovered, soy sauce sesame oil and top with garnish like marco.

I like the confidence and calmness shown by marco whenever he cooks. I just wished that because of the influence he had in making Chef Ramsay a great chef he is today, they should be great buddies looking out for each other and i need to see marco being a jugde in one of hells kitchen's challenge. Thats how its meant to be, no enemity but love between them. Thats my wish coz i love them both, Marcsey!!!

Chinese dish, and its the most perfect way to have sea bass, steamed with soy sauce , ginger ,sesme oil, spring onion, then topped with corianda ,, that can leave or take tbh.. ingredients i dont think any marries flavours and textures together better than chinese. often the dish cook the way are the best ways to have it.
