Hello everyone! Welcome to The Unsalted Kitchen, by Dioza. I'm "May," but friends and family call me Dioza. I'm a Filipino who's married to a wonderful man from Texas. My father-in-law was from Holland and his wife was from Kentucky. I want to share my cooking with all who seek a healthier diet. I am vlogging my unsalted and low sodium dishes to help others like my father-in-law, who started having chronic kidney disease and blood pressure problems at the age of 90. His kidney doctor recommended a daily sodium intake between 1,300mg and 1,500mg. I am going to do my best to make every dish and video simple and easy to understand. It is my hope to help other people.

BURONG ISDA
rekado/ingredients:
1 kilo or 2.2 lbs na puting isda
Tilapia, white bass, crappy, or stripper
3 tbsp Asin
2 takal or cups na bigas / rice
Gamit para sa buro.
Garapon na gawa sa babasagin na may takip na plastic or metal
Goma or lastiko
Silupin
Tip: kailngan malinis at tuyo Ang garapon na gagamitin upang Hindi masira Ang BURONG isda.
Method/ Ang Pag gawa
Isaing Ang dalawang takal na bigas at palamihin ito.
Paghaluin Ang Asin at kanin at ito ay lamasin ito Ng mabuti pero Hindi durog.
Maglagay Ng konting kanin sa garapon kasunod Ng isda. Gawin ito Ng paulit ulit hangang magalit at maubos Ang isda at kanin. Alternate po natin.
At kailangang siksik na siksik po at walang hangin.
Takpan Ng silupin, lagyan Ng lastiko, pasingawin Ang hangin bago itoy takpan Ng mabuti.
Ibilad or ilagay sa mainit na Lugar sa lion Ng dalawang lingo bago ito iluto.

Ang dami pla kasabihan ng pag gawa ng buro totoo yan sis naririnig ko rin yan noon sa probinsya. Akalain mo nakagawa ka buro masarap yan kapag May pritong talong at kamatis...

Sis may lahi din akong kapampangan kaya natuto akong kumain nito . At kahit sa side ng mother ko na taga nueva ecija kunakain din ng buro. Mga pinsan ko sa province gumagawa nito binebenta . D ako makabili sa kanila kc malayo. Thanks to you makakagawa na ako ng sarili kong buro.

ate debbei pwede kahit na ung frozen na nabibili. fresh ito pero xempre need ko rin e freeze sya kagad pag kahuli kc one day lang nagtatagal ang isda sa net. need linisin. salamat sa request mo ate Deb. sa uulitin.

Yung iba gustung-gusto nilalagyan ng luya pero nung si lola ko noon ang gumawa ayaw nyang lagyan ng luya asin lang tlg kasi aasim daw ang boro kapag may luya.

Tama po kailngan wlang tubig pat dried with Paper towels or let it sit on the strainer to drain most of the liquid from the dish.

PANGASINAN ALIWAN (NOT) PANGALATOK!!! "PANGASINAN" refers to the province, people, and the language. "PANAGSINENSE" is another term referring to Pangasinan people. Though it was coined by the Spaniards, it is widely use nowadays. "PANGALATOK" is a derogatory and offensive word. When was the term "Pangalatok" started? Long ago, according to Atty. Raul Lambino, there was a conflict that sparked between Pangasinense and Ilocano. The Ilocanos cannot understand how the Pangasinense talked so they said, "Pangasinan kasla kayo nga agtogkik nga manok no agsasao." (You are like chicken with a bad flu when talking.) Pangasinan+kasla+togkik+manok= Pangalatok. So the Pangasinense answered, "Sicayo ya Ilocano agyo amtay manpuniti no milaban, kapara kayoy asilok ya otot, mangkogtot." (Ilocanos do not know how to box, they jump like frightened rats.) Ilocano+kogtot+otot=Ilocogtot. "The term "Pangalatok" is insulting and derogatory. So too is "Ilokogtot". Atty. Lambino added. Some say "Pangalatok" came from the terms "Pangasinense" and "akatok" - a Pangasinan word that means crazy in English. So Pangalatok means crazy Pangasinense. We may not have a solid evidence where the term "Pangalatok" came from, but surely a Pangasinense do not want to be called one.
