The recipe for Irish Soda Bread is as follows for one loaf.
1lb of organic flour - wheat or spelt.
1tsp salt
1tsp bicarbonate of soda
Approximately 1 pint or 500ml of buttermilk
Optional - Seeds or herbs or seaweed.
Method - Weigh the flour, add salt and bicarbonate of soda. Add knob of butter and rub in until it resembles breadcrumbs. Make a well and add buttermilk. Stir into a dough/batter depending on your preference and then place in a well buttered pound loaf tin. (Alternatively place on a greased baking sheet) Place in a hot oven, gas 8 (450F or 230C). After 20 mins, reduce the temperature to gas 4/5, (350/375F or 180/190C) Remove from tin or from baking sheet and place on a cooling tray. I hope you enjoy your Soda Bread.

My mother-in-law came from Irish stock although she grew up in the Appalachias in the USA. She made soda bread that was marvelous. When she passed the family asked me what I wanted as a keepsake. I said “Her recipe box!” And they gave it to me! Your video brought to mind many happy memories of sharing her soda together. Thank you ❤

Well that was delightful to watch. St. Paddy's day here, where I live in these tall mountains of southern British Columbia, sort of marks the end of winter. I've made my own bread for quite a few years now, including soda breads and cakes. I haven't ever used buttermilk though and I'm sure the buttermilk adds a wonderful rich flavour. I was a shepherd, here in these mountains, for about thirty years. I kept goats and a few horses. So I was sort of a milkman, hand milking goats over those decades. My goats paid my way and a lot of kids (human children as well as goat kids) grew up on my goats milk. I made a meagre living from my goats but along with my garden produce I never went hungry. I don't have goats, horses, working dogs or house cats anymore, single now for quite some time as well, living here in my little cabin on the side of this 9,000 foot mountain with a long deep lake below me. Since I milked goats all those years I had my own milk to use (fresh milk as well as making yogurt - I sold both here in the village). Strangely enough, not having milk goats now, I buy cows milk from the store in the town 25 miles down the road. It's funny how life changes as we grow older. It is wonderful seeing how you live your life, doing the things you do in your garden and kitchen. Thanks so much for sharing. Cheers!

@@DanusIrishHerbGarden Hi again. I do wish I still had goats, and a dog. I miss the shepherd lifestyle a lot but now without the animals to care for daily I put my energy into my large garden. My last working dog died back in 2014 and now at my age I feel I am better off not having an animal or pet to care for. I suppose not having the animals has freed up a lot of my time. So with more time I write a lot, compose poetry, short stories and I'm working on my second novel. I also play music, all my own stuff, with my accordion and Yamaha keyboard. I think you live an interesting life as well. From what I've seen on your videos your place, cottage, yard and area, seem to be wonderful. Here I live in a small cabin, where I've been now for the past 34 years. One of the things I love is having this garden where I've worked growing herbs, vegetables, fruit trees and flowers for all these years and that time period has shown and taught me so much about the plant world. Our connection to the land is so important. I feel very fortunate to live in this small remote village here in these tall wild mountains. I'm sure you must feel the same about where you live in beautiful Ireland. Cheers!

Fun things you share. I’ve a new friend named Dottie from Galway who now live in NY. Beautiful Ireland. I’ve a book now Isle of Man, such a hard life back in the day no fast foods there or deliveries. But to visit I’m very interested in all of Ireland. My grannie is from England. I think after being in USA all my life I will venture out to all of UK. It Ireland I hear has great golf courses which my grown son wants to try. I’m happy to have found your channel.I do some home steading here in NY USA.it nice to hear about rituals history recipes and ways of other life out there. Ireland seems untouched more then most country’s of mutilation of ur earth and etc. thanks for sharing.I’ve tried soda bread with raisins it’s yummy

I love this recipe! Its delicious! At different times during the pandemic, it’s been difficult to find yeast, so this bread is even a better choice to make anyway. So hearty😋☘️yummy

I'm vegan, too. You can make vegan buttermilk simply by adding a splash of vinegar to your favorite plant milk. (It also works well for dairy milk.) I use buckwheat or oat flour for soda bread typically, since I also don't eat wheat. I hope that helps! Happy St. Patrick's Day!

Another alternative if you can't get hold of buttermilk is to add a teaspoon of Cream of Tartar to the mix per loaf as well and use normal milk.

So nice to follow your telling about irish traditions...I really enjoy that.. About the organic growths though...farmers that grow organic are also spraying a lot of shit..not as much..and less poisenous...but still not clean. I also thought earlier that it was good to buy organic..but now I know..its better...but not good. Sorry to disappoint you...Greetings from Sweden

Thank you for sharing your recipe. One of my cherished memories of time spent with my mother, (who is of Irish heritage), is of us making soda bread together. She just passed this last spring at age 90, I miss her so, but I have great memories. So enjoy your videos Danu, thanks!

I'm excited to see the nettle soup recipe ^^ Once the herbs start growing here in Germany, I'll be making 9 herb soup for Ostara myself. I think those traditions might actually be pretty similar. Is your soup also meant to cleanse the body of all the negativity, that remains from winter and bring the strength and energy of spring?

@@DanusIrishHerbGarden It varies from year to year and since 9 also stands for the entirety of things, you can put all the herbs in you can find. But I like to keep it in threes. Usually I put in nettle, bear garlic, ground ivy, yarrow, ashweed, daisy, chickweed, dandelion and ribwort. Sometimes I really have to search for them, when it's still cold on Ostara, but I manage to find enough for one pot. ^^

Hello Adriana, yes the temperature to start with is 450F or 230C and after twenty mins or so, reduce the temp to 350F or 180C. The recipe and all the info is in the link below the video😄

Ostara- Spring Equinox! Ancient grain Einkorn is nutrient dense. What do you think of Sourdough for it's nutritional benefits because it is fermented. ☘Thank-you for this vid!🌱 I eat a plant based diet for ethical reasons, so I use water only, and plant-based butter from the oven to the table. ☘

I love sourdough but don't have the patience to look after it. Einkorn is a wonderful tasty grain and I have used it a lot. Again it is less likely to be sprayed and poisoned if you get organic.🌸🌿🌿

A lovely video, thanks. I love your recipe and will try it. The smells in your kitchen must be brilliant, turf, soda bread and Guinness- wow. It brought back memories of staying in my great aunt’s cottage in Donegal where she made soda bread in a cast iron pot over a turf fire. We celebrated St Patrick’s Day and my grandson’s fifth birthday. Slainte

He is great craic and a lovely wee fella.Hopefully, common sense will prevail and individuals will still be able to cut and burn turf. He has already enthused about your St Patrick’s Day video. Yes Gracie was very wise and great craic. An bhean feasa. I have many fond memories of time spent with her. Sadly ,we had to sell her cottage and my mother’s house last year when my mother went into care but I can still do the quiet walks we did. The young family who bought her house knew her and are restoring her cottage. They inherited her cranes and cast iron cooking pots which she cooked with. It’s nice she will be remembered. Terry, do you never prepare sour fermented bread in Ireland? The process of Fermentation removes/metabolises all Gluten into nonexistence. I am a German, and i Like sour fermented bread. But i love your recipe with Buttermilk! Perhaps i give IT a try. Thanks for your inspiration to prepare one's bread oneself. Most peoples do not know about the poisonous practice of industry. My oven does Not Work properly: but god be praised i get a sour fermented bread from 2 Young Guys Here in the Village. The best to you, Terry! I love your Films! Kath.

I tried your recipe and they're AMAZING! The butter cut into the flour helps make it moist and fluffy. I even put some in a buttered muffin tin and the kids couldn't keep their hands off it. This recipe will be a regular in my kitchen ❤

Thank you Terri for another lovely and informative video. I so look forward to them, and feel I've experienced a little treat each time a new one pops up in my feed! I used to make soda bread all the time after visiting Ireland on my honeymoon. Sadly, I too have a gluten intolerance. I wonder if I can import an organic whole wheat grain from Ireland and mill it myself? Here in America 99% of our wheat flour is not only doused in chemical but is also genetically modified and believe that is another reason our bodies cannot tolerate at. Thank you again......so looking forward to the nettle soup video!!

I think that Ireland imports most of our wheat from the UK and Europe as we don't have the best of climates for wheat. I use Spelt which is an ancient form of wheat that hasn't been as modified over the millenia and it has less gluten than wheat. There will be someone in US who is growing organic wheat, try asking at permies.com/ an American website which is very informative.

@@DanusIrishHerbGarden hi Terri. This reply is a long time coming. I did find an organic spelt. First of all, your soda bread recipe is by far the best I've ever had! I'm serious about that. I especially liked that it was soft enough to use for sandwiches. Thank you for sharing your recipe. I was so hoping with spelt having a lower gluten count and being organic it would agree with me but alas my gluten sensitivity kicked into high gear and I suffered for a few days😂 it was worth a try! Thank you again I so enjoy your videos and learn much from them.

I made this recipe plus another I found that uses baking powder and melted butter. After a blind taste test we unanimously voted for the loaf made with your recipe. So spongy and great flavor! Thank you for sharing your recipes! Can't wait to try more!!!

Lovely video Terri. Half natural yoghurt half milk works too if you don't have any buttermilk to hand. Soda bread is such a quick and easy bread. I make it every day, just like my Mum used to when I was growing up. I find it ultimately easier on the stomach than yeast bread. Lá Fhéile Pádraig! ☘️

I love your flour maker, on my wish list of kitchen appliances. I don't always find buttermilk locally so I now use about 3 tablespoons live yogurt stirred in to the milk instead. Thank you for the recipe. Happy Paddy's Day.

What is the difference between soda bread and brown bread? Do you have a recipe for brown bread that you would be willing to share? I had brown bread when I went on a holiday to Ireland with my brother and sister many years ago and it was divine. I still remember the taste of it. Thank you for sharing your soda bread recipe.

Soda bread is made with bicarbonate of soda instead of yeast and brown bread is any bread made with brown flour. You can make soda bread with unprocessed or brown flour, or with white. Try both and you will notice the difference.

I'm interested in learning more about your machine that processed the grains into flour. I really want to make my own bread with wheat I grew myself. But the processes of growing wheat and turning it into flour seems so intimidating and hard. I need to educate myself more on how to do such things.

It is a flour mill. In Ireland you can get them from Fruit Hill Farm -www.fruithillfarm.com/. Growing wheat need you need a lot of land and a particular climate, (from what I understand). I grow Oats which will grow in poor soil.

Lovely video Terri! You have a cozy kitchen, love that stove! As I have not buttermilk here in Argentina, I prepare it myself with common cow milk and lemon juice. Soda bread is great with butter and our "dulce de leche" ( caramel) but also for salad bites!

I'm also from Argentina and while some lemon on milk will work somewhat, it'll be much richer with diluted yogurt (diluted with milk) as it allows the acidity to activate de soda but again with more 'body' to the loaf. When I'm feeling wild, i'll add one egg to it, or make a sweeter version. Cheers

Ohhhhhh... , authentic Irish😘Soda😍Bread ... with *N e t t l e s🌟S o u p* and all: how gorgeous does THAT truly sound 😋...!! Quite a few aeons ago, for my very first attempt at/foray into baking actually, from a Paddy's☘ Day recipe i'd come across - in The*Guardian's Sunday Colour Supplement, as i recall ( ! ) - i truly did have a go at making a proper Irish Soda Bread, and - to my astonished abject amazement - it actually turned out not half bad at all 😲😊...! Hadn't thought though to have it with a bit of Guinness Stout; that w o u l d have been well brilliant, it would: "cakes and ale" 😁...! But i did serve it up with some lovely "Kerrygold Pure Irish 🇮🇪 Butter", raspberry jam and cups of Barry's Tea, to a couple of mates - who hailed from Baile Atha Cliath ( ! ) - and they truly loved it; it was quite a success in fact ☺ Oddly enough though, i've never really tried making it again 🤔🤨; oh well, at any rate then, i sincerely do very much doubt mine had turned out nearly a fraction as lovely as yours did - and does - there, so i guess it really wasn't too great a loss anyway to the world of bakery-and-cookery 😄.... ~Marvellous video, **Terri*,* as always 😊💚💖...!!!

Hi Danu, Thankyou for this video. Can you please clarify what organic flour I should use for gluten free option? Or because its organic, it's unprocessed, pesticide & chemical free & therefore I wouldnt need a gf option. Is that correct? And is it plain or self raising? Also I am using a normal oven. Can you please confirm the time and temp for fan forced and the time and temp for non fan forced. Sorry x

Hi Cat, gluten free is a separate issue to organic. i would opt for organic every time and especially for GF as that often has a lot of cornflour in it. If you are using GF flour to make bread you will have to add something called xanathan gum which helps to prevent it turning into a brick. if you can get GF self raising I would use that although usually it would be made with plain flour. i can't advise on your oven, just follow the instructions and see how it turns out. My oven is very contrary and sometimes it takes longer than other times. I don't have a fan in my oven.😀

About another 15-20 mins, but check and take out of the tin and tap the bottom. If it sounds hollow it is probably done.
