Being a Kumauni living in Southern part of India, you dont know how much nostalgia you brought. I am so attached to this food that when ever I visit home , I bring all the things with me like bhaat k daal, badi, gahad k daal. Pahadi kheera & puye single. Only if uttarakhand had jobs abundance, no native would have left this heaven. I am from fauji family & lived in many states in india, & trust me you will not get the happiness, calmness & sukoon bhara vatavaran anywhere than uttarakhand My heart is always there❤

Kumaoni Pahadi khane ki khasiyat he uska kam masalo mein pakaya jana. Pahad mein kyunki thand jayada he toh khana jaldi pakane ke liye traditionally daalon (pulses) ko pees kar banaya jata he. Aur din mein bina bhaat khaye pet bhar hi nahin sakta. 1. Hum bhatiya khate hein wo bus peese hue kale bhatt (soya bean) ko sarso ke tel mein , lohe ki kadhai mein paka kar banaya jata he. Use khaya jata he hare noon (mirch, dhaniya aur namak ko pees kar) ke sath, ya fir palyau/jholi ke sath. Jyada kuch masala nahin. Wahin ismein sukhe gaabe ko bhi dala jata he. 2. Gaderi ki sabji. aaye haye, kadhai mein ubaal kar us mein peesa hua bhaang (hemp seeds), aur gaaba bhi add kar sakte hein. 3. Peese hue gahat ki daal. 4. Bhatt ya gahat ki daal ke dubke kah lo. 5. Bhatt ki chadkani. 6.Aaaloo ke gutke toh hein hin. Bhaang ki chatni usmein aek aur flavour de deti he. 7. Aur agar aapne chukh aur maalta saan kar , bhaang ke naamak ke sath nahin khaya toh pahadi khana pura nahin ho paega. 8. Sel/sail ko hath mein hi lekar tel mein dala jata he, ismein softness ke liye aajkal log soda dalte hein, par gaanv wale ismein daalte hein, aek root (jad) naam yaad ni aa ra paudhe ka. 9. Shikar bhaat bhi jaruri he. Shikar bhaat mein gravy thodi patli rehti he. 10. Meat mein "panchola" aur "bhutwa" ka apna hi maja he. 11. Lingde ki saag 12. Palyau Bhaat 13. daal bhaat 14. Bina matthe aur chanch ke khaana toh mujhe adhura lagta he. Jismein upar se hara noon daala hua ho. 15. Pulam aadi ki chatni 16. Buraans ka juice. 17. Maalte ka juice 18. Maudwe ki roti. Bajre ki roti 19. Kakdi ka raita, usmein peesi hui sarso kya tingy ness deti he. 20. Kaale chane ke saath raita, maja hi dila deta he. Baki bahut kuch he abhi ke liye itna hi. Kisi ko aur bhi pata ho toh please add on.

In 2005 summer’s holidays we had Acting classes in our college in Haldwani(Uttarakhand) n Gopal sir n other NSD actors were our mentors…. Gopal sir is a fabulous singer n composer.. n we had this Play Thul Chaliya…O my my those were the best summer break of life.. Traditionally singal rice flour se banta hai. Usme slimey consistency k liye special root daalte hai. Aajkal singal suji k bhi bante hai aur slimy texture k liye bhindi bhi use ki jaati hai

Nice programme. Must be appreciated for its honesty. There has not been any concept of snack food in most of the parts of Uttarakhand. The locals only ate the regular food at regular intervals. The snacks mentioned here have been eaten all over the region. However, having said this a few other snacks could have been added. Kala Chanda gravy, Pakodi ( Pahadi style), shai ( The rice pudding), lapsi ( wheat flour halwa) and a few things that i am missing. Snacks were mostly eaten when you went from the village to a haat or a place where one could buy things of regular use from a market place- often referred to as Padav. Bhatua - a dish made of mutton offals - was a regular snack for the non-vegetarians, if not the only.

That rice must be jhangor and we use them to make kheer...its very famous in uttrakhand. Another speciality of uttrakhand is aarse( jaggery within the layer of rice coating) baalmithai, and rotana( it's made out of flour and jaggery then kneaded into a dough then shaped into small circles and then are fried)
