Well, since we're all social distancing and/or on lockdown due to covid19, filming for HTK has had to be postponed. So I'm home...as we all are. But since the cooking continues, I thought I would share with you anyway what I am cooking! It's not the slick video that you're all used to seeing on my channel, but it's what we can manage right now given the circumstances. Hope this finds everyone well, safe, and sane, and I hope I can provide some entertainment and inspiration while you're all stuck a home!
We just ran out of granola so it's a great opportunity for me to share my recipe with you because this is an AWESOME granola recipe. It's one that I have been making for years and years because it is so good, and hubby loves granola and yogurt for breakfast! Granola is a great thing to make during this time as it uses only pantry, shelf-stable ingredients. You can change up the dried fruit and nuts to whatever you have, change up the spices, and you can even change the honey to maple syrup for a different flavour or for a vegan version as well!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RU-vid channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RU-vid videos, her cookbook, and cooking classes. Hi, I made a 1/3 of your recipe, and it turned out really nice.. Thanks for sharing the recipe. One question though, I eat granola because its kinda seen as a "healthy" food, wouldn't adding all that oil, honey and sugar make it unhealthy?

I think I speak for so many people when I say I love how genuine Pai is. She's not some fake personality on camera, she's legit, laughing and smiling away as she makes everything look effortless. Right down to when she says "weeeeeeee" when she pours things. Please don't ever change!

It's just so funny that babies always use the word "mamam" for 'food' or 'I want to eat'😂 Btw, I hope you, Kaan & Craig will always have a good immune system and antibody. Just made it, this is delicious! Used coconut brown sugar and added a tablespoon of natural peanut butter. Didnt want to wash a big bowl however, so just used a good sized saucepan and added the oats into the liquid mixture 🤣. Hope you and your family are staying safe and healthy Pai! I actually love this format of video more than the others. This feels real, it's good to hear that you too have trouble with recipes and what a spacious kitchen!! Feel very welcomed and haven't looked away once. The other kitchen is pretty tight and feels way different. Love how genuine you are and sometimes I just love watching your videos without even cooking the recipes :D

I sincerely appreciate that you encourage people to reuse parchment paper and that you used the leftover cinnamon sugar. As someone growing up in East Asia, I find your approach a very Asian way of environmentalism!

My gosh, your boy is adorable! That 'Mamam!' sounds so familiar, it's all I hear all day long :p, no matter how hard I try to make him say papa (he know how, just doesn't want to!) Just the last 3 days everything suddenly is 'papa!!' , so I think he's broken ;).

Thank you for a great video! I did read that heating raw honey over 98.5 degrees will destroy the beneficial enzymes (nutrients) in honey. I always use cheaper honey when the recipe calls for heating it up. :)

Hi neighour! This comes from Cooks Illustrated - similar proportions but by weight: Combine in large bowl 6G salt, 65G Maple Syrup, 75G brown sugar, 18G vanilla extract, 200G neutral flavored oil. Add 900G regular rolled oats, 500g chopped nuts. Bake 350/30 minutes. Makes 2 x half sheet trays. Cheers. Enjoy your new induction stove!

Soooo much granola! I've been looking for a foolproof granola recipe but somehow mine never come out crispy unless I leave them in the oven for like 45min. Using quick oats instead makes so much more sense! Thank you!

Loved this video. The kitchen looks great - it is so relatable and not some super gourmet kitchen. 😄 the recipe to your “famous” granola 😂 looks yum!!! Love that you mentioned reusing the parchment paper. I hate how much other people waste things and this made my green heart 💚 so happy. And “mumum” - that’s one baby word that my kids(now 10 & 5) still continue to use. And I love it! 😂

Here in Germany a lot of people start to make their own bread now during the lock down. We now have plenty of time to watch the sour dough and yeast do their job...😉

Haven’t even watched the video and I’m already thankful for this! I’ve been looking for a good granola recipe but none come out crispy enough. I had found a store bought one I loved but it made me feel sick. I didn’t read the ingredients and it had sunflower seeds, which I’m allergic to. The flavor was amazing though!

I've made this twice now! Super easy and it's a staple for my breakfasts now. Be sure not to burn it, but honestly, I've kind of grown fond of that super crispy, caramelized granola. Such a nice step up from regular oatmeal.
