It's because like most baby animals there fur/skin/hair is super soft. Another example- a first time shorn sheep's wool is worth more than regular wool.

They actually DONT kill the baby seals... It's illegal to sell baby seal fur (Which you can tell is from the babies because its bright white and fluffy, while adult seals are grey/shorter fur) iirc
