OMG. Chef, this is my beloved Daddy’s food when I was a little girl! ( RIP) ! Very precious memory! My father’s family spoke pure Madrid Spanish fluently , Kaya my aunt who was their great chef cooks Spanish Filipino foods in Iloilo City! Daddy talks fondly about this moresqueta tostada!

Morisqueta is diminutive of the word moro and tostada just means crispy . A rice dish which traveled via Spanish galleon to Acapulco, Mexico but of Filipino creation with Spanish and Chinese influences . Thanks for bringing this dish to our awareness. A lot of Filipinos make this dish regularly but we don't know there's a name for it.

I suddenly remembered my late father, this is how he called fried rice. It’s a spanish/ chinese fried rice. Sa mga old chinese restaurant sa Binondo, you can sometimes find this still on the menu.
Hello po chef. This recipe brings back memories po. Since this is the very first recipe that i have learned from our H. E. teacher in Grade 6. Way back 1980s (oldies na po hehe). I really love MORISQUETA TOSTADA, since then. But now that i have kids i will surely cook this for them. We all are FRIED RICE LOVER, and my simple recipe of "SINANGAG" always UBOS. I'm gonna try cooking your recipe for them, surely they will love it too. Thanks chef ❤️😘❤️
