In today’s video, we’ll show you how to make this quick one-pot meal packed with the goodness of spinach, fragrant basmati rice, and aromatic spices. Perfect for lunch, dinner, or as a side dish, this pulao is sure to be a hit with your family!
Ingredients:
- 1 cup basmati rice (washed and soaked for 20 minutes)
- 2 cups fresh spinach leaves (finely chopped or pureed)
- 1 medium onion (finely chopped)
- 1 medium tomato (finely chopped)
- 2 green chilies (slit)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 2 cloves
- 1 small cinnamon stick
- 1 bay leaf
- 1/2 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
-1/2 teaspoon kitchen king
- Salt to taste
- 2 tablespoons oil or ghee
- 2 cups water
- Lemon juice (optional)
- Fresh coriander for garnish
*Instructions:*
1. Heat oil or ghee in a large pan. Add cumin seeds, cloves, cinnamon, and bay leaf. Sauté for a few seconds until fragrant.
2. Add the chopped onions and green chilies. Cook until the onions turn golden brown.
3. Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.
4. Add the chopped tomatoes and cook until they soften and the oil starts separating.
5. Mix in the turmeric, coriander, cumin powders, and garam masala. Cook for another minute.
6. Add the finely chopped or pureed spinach, and cook for 2-3 minutes until it wilts and mixes well with the spices.
7. Drain the soaked rice and add it to the pan. Stir gently to coat the rice with the spinach mixture.
8. Pour in 2 cups of water and add salt to taste. Give it a good stir and bring it to a boil.
9. Cover the pan and cook on low heat for 15-20 minutes or until the rice is cooked and the water is absorbed.
10. Once done, fluff the rice with a fork and add a squeeze of lemon juice if desired.
11. Garnish with fresh coriander leaves and serve hot with raita or salad.
