Man, this is weird. This is a video I'm actually qualified to talk seriously about, not just make some smartassed/dumbassed remark. Back a decade or so ago, I lived in Morelia, Mexico for a couple of months. I had to cut my journey short and return to the US because in the same week, 12 people were decapitated on the edge of town and the Swine Flu broke out. True story, but I digress. I discovered the paloma through no choice of my own- it is what I was served when I ordered a margarita in a place that didn't make no steenkin' margaritas. There are two key factors in the paloma as it is served in .mx that you are missing, IMO. First is the simplicity. The ingredients are just Fresca Toronja (Mexican Fresca made with sugar, you can get it at Mexican grocery stores), reposado tequila (I use El Jimador but anything mid-shelf that doesn't suck will do), lime, and salt. The second key to the drink is the interplay between the sugar, the salt, and the smokiness from the tequila. That's why it is important to get the salt in the drink, not just on the rim. I don't even rim the glasses anymore when I make them, I just put salt straight in the drink. When you drink one that is made just right, you will wonder if you are drinking something illegal, because all of the taste receptors in your mouth will light up in unexpected ways that seem mysterious and slightly forbidden.
I agree the salt in the drink is really important. I usually grab a nice pinch of kosher salt and crush it between my fingers and sprinkle it in the glass before I pour in the soda. I also use Squirt and squeeze a bit of lime in there to brighten it up.
JK Lyons at this point it’s expected unfortunately. I have my entire maternal side of the family in Acapulco and I hear of what happens. It sucks and it’s something that the media will hardly ever cover and when they do they make it appear like that’s all that is happening. Like Chicago I guess. All you hear is about the bad neighborhoods. They don’t realize that there are dozens of other neighborhoods.

My girlfriend got all of these ingredients to make the drink for my birthday with company tonight. The best thing about this channel, when she asked what drink I wanted, I simply said choose one from this channel. Easy for her and I know I’m going to enjoy whatever I get.

American grapefruit doesn't do it justice. I had grapefruit in Israel once and they were as sweet as American oranges. The oranges were the nectar of the gods!
I used to hate Grapefruit until I started Bartending and discovered syrups and sweeteners. They are so awesome with the Bitterness they bring. Grapefruit peels for Tequila drinks are choice
I don't muddle any grapefruit or mint in mine, but I do add 3/4 oz fresh lime juice and rim the glass with salt. If you make it with a reposado, it tastes like it doesn't have alcohol in it... which will either mess you up or refresh you. Terrific drink for the summer.
As you make more and more videos, have you thought about releasing your own HowTo cocktail book? A compilation of your favorite mixes, along with your own twist recipes and any short stories you have regarding or relating to the drink.

Like you said there are so many recipes! I saw one YT bartender make it 3 ways: with grapefruit juice and without and with and soda water and another with grapefruit soda. I take it as since a simple beverage you go with what is in your house. I think a nice summer drink. BBQing...or by the pool...
It's quite difficult to get ahold of grapefruit soda where I'm from so I make my Palomas with freshly squeezed grapefruit juice, soda water and a dash of simple syrup instead. No idea whether this makes for a better or worse version of the drink but it sure as hell is delicious! Super refreshing alternative for when you get bored of Mojitos!
Gonna have to try this out, we have a different recipe at the bar I work in. We use fresh squeezed lemon, agave nectar, lime, and grapefruit. Tres Agaves Repo. Shake. Then we top with stiegl radler grapefruit beer. Salt the rim, express a grapefruit peel, garnish with peel as flower blossom, serve and enjoy 👍
love it! I use squirt when I'm with the family. My recipe behind the bar is: 2oz blanco tequila Bar spoon of Vida mezcal 1.5oz grapefruit juice .5oz lime juice .5oz agave shake top with topo chico or soda in a collins. try it out if you'd like!
Idk if you’ll answer this but I have a party tonight and your videos have got me seriously into mixology and shit like that my fav part of every video is honestly the intro stating that you have zero bar experience makes it very realistic to do all this at home. Onto my actual question after doing very light research online isn’t this drink traditionally made in a highball glass and if so are the steps the same, is the salt a necessity, and is espolon okay to use? I've been finding so many new ways to enjoy drinks. Ones I really want to try I save and when traveling i ask bartenders to make that said drink so i know if its something id be willing to invest time at home on. Thanks for the fun ways to enjoy down time.
This looks uber refreshing!! I never thought to muddle the grapefruit and lime and leave in the glass or add the mint🤔I’ve made Paloma’s in the past with fresh squeezed grapefruit and lime and grapefruit Perrier. I must admit adding the salt INSIDE the drink is key. It adds a very different flavor profile. But I will definitely try your version. It looks very very good!! Keep em coming Greg!!!
I definitely like a good Paloma, if its basic like Squirt and Jimador. Or a little more with a mix of Mezcal, some choice tequila with lime and grapefruit juices and a splash of Squirt or Fresca, also helps if you torch the grapefruit to bring out some more smokiness of the mezcal.
Interesting cocktail I came up with out of desperation because I wanted a Hemingway Daiquiri but didn't have any limes. It's a spin on the Greyhound. I wanted a drink with rum, I had grapefruit, so why not. 2.5 oz White Rum (I used Bacardi) 4.0 oz Grapefruit Juice (Fresh squeezed is best) 0.25 oz Simple Syrup (made from turbinado sugar 1:1 water to sugar) 2 dashes of Ango bitters Shake it til cold, double strain (if you want, I don't it's less dishes that way), enjoy! Speaking of the Hemingway, I really enjoy mine with half white rum half aged rum. Adds a nice sweetness and depth while still keeping it light and refreshing!
Definitely sneaky drink. Worst same day hangover of my life was from a morning of Paloma’s in Austin, TX. I’m glad to see you guys back to the shorter vid format. It flows much better.
I was introduced to "La Paloma" while catering for a Mexican wedding while in the Marines in Yuma, Arizona. Word to the wise, this will sneak up on you!
So in my bar we do a pretty good variation using El Jimador and Solerno Blood Orange Liquer. For the most part here in England bars use Ting grapefruit soda in Palomas. As aways, keep it up Greg.
Man, huge fan, I'm from TJ and now live un México City, the most common recepie is Fresca soda, lime juice, Salt (in the drink) and tequila, however, the one you just made is the friking bomba! Takes the Paloma to a hole other level! I'm a restaurant owner and will implement this recepie! Greetings from México City Bro!

Great video, gonna have to try this! Being a whisky drinker, I hadn't been into tequilas until I tried Espolon Anejo (finished in bourbon casks). Watching these videos now I want to try Fortaleza. Gonna have to save up though; their Anejo is $90/bottle where I am.

Another sneaky drink you should do is the Alabama slammer. I've had it 2 ways, as a frozen drink and as a shot. I prefer the shot recipe better but both at really good.

I've never had it like this, and I'm from Mexico. I gotta try this... Sadly, the Squirt soda they sell over here only has sucralose/acesulfame k and you can notice the taste. It was miles better when it had sugar.

Hey man! I'm curious as to what you think about how I switched this up. All the ratios are the same, but I muddled the fruit in a shaker tin along with 4 or 5 frozen cranberries (This just provides a really nice color to the drink) added the tequila (Fortaleza reposado) along with a few dashes of bitters (Do I need em? I'm experimenting but it tastes great in the glass Im sipping on right now and I feel like it works), filled it up with crushed ice and shook the hell out of it. Prepped the serving glass the same way with fruit wedges/salt and double strained the liquid into the glass.
Interesting, looking forward to trying this recipe! One time I premixed a bunch with grapefruit juice and water as the “mixer” and the carbonated / bottled them with a soda stream. Then drank them all and got super drunk!

In another specific context (which is what I instantly thought of) I'm more familiar with it, but I'm not not sure I want to use that in a drink...
