What You'll Need
3 pounds Hen of the Woods mushrooms, trimmed and thickly sliced
6 tablespoons Olive Oil
2 shallots, peeled & minced
2 large garlic cloves, minced
3 tablespoons unsalted butter
3 tablespoons fresh thyme leaves
Kosher Salt
Fresh Cracked Black Pepper
How to Make Hen of the Woods Mushrooms:
1. Heat 1 tablespoon of oil in a large saute pan over medium heat
2. Add a handful of mushrooms (just enough to loosely cover the
bottom of the pan).
3. Salt & pepper the mushrooms and let them sizzle undisturbed
until they begin to brown on the bottom, about 2 minutes.
4. Turn each mushroom slice over and add a little of the minced
shallot, garlic, butter and thyme.
5. Continue cooking the mushrooms until they are tender, moving
them around the pan from time to time, about 2 minutes more.
6. Transfer the mushrooms to a paper towel lined plate.
7. Wipe out the pan and repeat until all the mushrooms are cooked.
8. To serve, wipe out the sauté pan one last time and place over
medium heat.
9. Add 1 tablespoons of olive oil. Add all the mushrooms. Season with
salt, pepper and some more fresh thyme. Add more butter if you
like. Toss the mushrooms all together and cook until heated
through and serve.
