I've had good luck with the SKs EXCEPT, since I used to race CX a lot, I get in a lot of trouble cornering too hard on them. They corner okay, but you cannot be aggressive with the lean on gravel or mud. But they roll pretty quick, and I've never punctured them. And they wear pretty well.
How would the sk+ 27.5x2.1 fare on the GDMBR? I have a surly bridge club and want to do rail trail and off road routes like the GDMBR as well as the transamerican routes while running tubeless loaded either bikepacking or touring with panniers.
