**BASIC PANCAKES, FEEDS 4-6 PEOPLE**
2 tbsp (28g) butter
2 tbsp (25g) sugar
1 egg (just use the yolk if you're making a half-batch)
2 tsp (5 ml) vanilla
1 3/4 cups (400 ml) milk or buttermilk
1 tsp (6g) salt
1 heaped tbsp (16g) baking powder [or 1 tsp (6g) baking soda + 2 tsp (8g) baking powder if using buttermilk - this is different from what I say in the video, but it's better]
1.5-2.5 cups (200-300g) all-purpose flour
Additional butter for the pan
Melt the butter without getting it too hot, mix in the sugar, then beat the egg in thoroughly. Mix in the vanilla, milk/buttermilk, salt and baking powder/soda. Start mixing in a conservative amount of flour, then keep mixing until you get the thickness you want. The thicker the batter, the thicker the pancake. Be sure to not over-mix - the batter should be full of small lumps. Let the batter rest a few minutes while you heat up your pan.
Heat your cooking surface of choice (I use nonstick) to a low-moderate heat and smear it with butter. When the butter is just starting to brown, pour on the pancakes. When there are lots of bubbles on the surface, flip the pancakes and cooking until they look cooked, then cook them another minute before removing to a cooling rack.

For anyone wanting an even coloring on the pancake with no "leoparding", use a very light brushing of vegatable oil or olive oil on the pan. Butter creates lighter spots while a thin coating of oil creates the look of a perfectly brown pancake.

Actually, it's better to skip fat entirely and use a non stick pan. You can smear butter on it afterwards for the flavor.

In my (west) German family we cook our pancakes without baking soda or sugar. The thinner the better! Also, we usually fill them with things. We always lay out a selection of jams, creams, cheeses, and meats out on the table and everyone builds their own pancake wrap.

I’m 12 years old, and as a kid, this recipe is suuuper simple and easy for me. I made pancakes for my parents and they really liked it. The trick for checking if the pan is too hot or not works really well! The pancake tasted really good! Thank you for the recipe, I really like your channel!

My mom taught me a recipe for pancakes that I still know by heart to this day, a decade or two later. It's crazy simple to scale up or down depending on how much food you need. It's pretty thin compared to those in the video but that's what I like. Usually make pretty big but thin ones and roll them up, sometimes with delicious fillings. X eggs X dl of flour 2X dl of milk (You can even go X dl of milk and X dl of water of you're low on milk, or cash) That's the basic formula. Everything else is gravy in my book. My usuals include X tablespoons of sugar and a pinch or three of salt. Maybe some vanillasugar if I'm feeling nostalgic (this was the addition that made sure that no other pancakes could (can) compete, along with a sublime mastery of pancake-making honed to a razor's edge by years of experience). On the somewhat laborious cooking process and storing of finished pancakes during it. When it's just me I usually eat them standing in the kitchen, cooking and eating combined into one activity. Nowadays that's one of the charms of pancake-making to me. Also don't underestimate skipping the sugar and filling them/serving them with something savory for something that's less like candy. TLDR: Thinner pancakes X eggs X dl of flour 2X dl of milk. Everything else is pretty much just for flavor. Go nuts! Eat them with something savory like salmon or mincemeat for a surprisingly nice change of pace.

@@thomb.9013 Dl is deciliter yeah. In Imperial/American measures a deciliter is just shy of half a cup (0,4 of a cup to be precise). I don't know if that info is helpful to you but there it is :). (It will be a thinner batter than traditional American pancakes but they firm up when cooked).

That is pretty much the basic recipe from over here as well (Netherlands here). Pretty much a semisweet flatbread! Though when I see all the... Dessertification or Cakification of american pancakes I suspect it may not be for most people used to that kinda pancake. At least, not untill you get the hang of cooking it just right

As a British person who has never made american style pancakes before, this was very helpful. I was surprised by how much the lumpiness of the batter turned out to not matter at all, and how completely different they turned out from what I'm used to. I probably prefer them if anything.

I recommend simply safe. Everything, except the lock. Last thing you want is someone silently hacking your door. If someone tries to lock pick your doors, they will look suspicious and be loud. Not to mention a bump-key safe lock will keep you protected from most thiefs.

I noticed that American pancakes are very similar to Russian aladushki. In Sweden (and most of Europe), we tend to make pancakes thin, with no baking powder and a 1 part flour, 1 part eggs and 2 parts milk recipe, resulting in a thin, crispy pancake while cooked. Works with the same condiments, Canadian maple syrup or sweetened condensated milk being personal favorites.

I love the way you cook man. Real world, no pretentiousness, and approximate amounts of ingredients. Not making perfect the enemy of good. Also, testing the temperature of the cooking surface with water droplets is the same way my grandmother taught me to do it. When I made pancakes for my friends, my culinary school graduate sister looked at me like I had 3 heads when I told her how I do it. And then they came out perfect.

I made these pancakes today! I did some altering, which was orange flavoring rather than vanilla because we were out of it lol so we decided to put chocolate in the end. Just something to note -put more sugar in it. I guess the maple syrup acts as the sweetener for the whole thing, but if you want sweeter pancakes add more sugar. -these pancakes are heavy. I’m not used to eating heavy things so this kind of threw me off as a surprise haha. -powdered sugar is a nice addition. anyway that’s my experience with the pancakes!

6:03 Here is the dutch way of keeping your pancakes warm: you get a pan and fill it halfway with water. Bring to a boil and put a flat dinner plate on top of the pan. Keep the water simmering inside the pan. This plate will get very hot. You just layer your pancakes on top of this hot plate and put the lid of the pan on top of the stack of pancakes. When you are done you just take the plate with the hot stack of pancakes and put it on the table!

My home tip: If you like your pancakes thick like I do, turn down the heat to medium, or around to where the butter just barely sizzles. Let it cook for slightly longer at a lower temp to the same effect (surface bubbles) and you'll never have under done middles and overdone faces. That pan was way too hot for that size pancake, imo.

@@aragusea I had buttermilk biscuits and gravy at home personally. Definitely prefer pancakes later in the day, so this totally worked out haha. The rack totally makes a difference in texture, vanilla extract definitely sets it off as well; nice work as always! From Dahlonega 👍

3:38 if the pan is hot enough for the water to roll around on there like that then the pan is actually extremely hot. It's called the Leidenfrost effect, and it's when a liquid is on a solid that is way hotter than it's boiling point so it evaporates immediately and the water is now resting on a bed of it's own vapor. For water, leidenfrost effect happens at at 193 degrees Celsius or 379 degrees Fahrenheit (The leidenfrost point of water).

I have no idea what the temperature was of that pan, but in no culinary universe is that extremely hot. I have done the water droplet test a thousand times. It dances around like that a medium heat. At high heat, it immediately evaporates. This is empirically true. Go to your stove and try it. I am also hardly the first food writer to describe this.

The dancing waterdroplets are part of the leidenfrost effect due to a layer of steam immediatly being created between the water droplet and the pan.

@@georgemoustakas4030 I'm not denying science. I know about the Leidenfrost effect. I have no idea if that's precisely what's happening here. What I do know is that pan is not "extremely hot" in the culinary sense. Water droplets do that in a pan over medium heat. They evaporate far more quickly in a pan over high heat. If you don't believe me, go to your stove right now and try it. The droplet test is taught in basic cooking classes all over the world.

My dad made the best pancakes from his Navy cookbook and I’ve only replicated it successfully once but I recently stumbled into it via a cobbler batter mistake. Made me cry. Daddy always said: you’re just making a cake. Pan. Cake.

A tip I've found super useful is to use a nonstick pan and not grease it. It basically works like a flattop griddle and gives you that gorgeous golden brown color edge-to-edge (no splotches). I've never had issues with the batter sticking, either! It makes pancakes at home look just like pancakes from a diner.

Tried your tip of adding baking powder to the batter. Best pancakes ever. I sometimes make from scratch but mostly used Bisquick until I discovered Jiffy Mix this year. Always had mixed results. I added 1/2 tsp to the mix. What a difference. I used my egg pan this morning just for fun as I only had a small amount of batter left from a previous day. They came out so fluffy I'm going to start making a home version on McGriddles. Thank you for the tip.

That dancing around in the pan is actually a sign of higher temperature than quick evaporation. Higher pan temps cause the Leidenfrost Effect to occur, in which the liquid boils so fast it creates a gaseous barrier (in this case steam) that slows heat transfer to the main body of the liquid droplets, so they actually last longer. The rapid boiling is responsible for them roiling around the pan. On an unrelated note I absolutely love your channel and have binged everything on it since I reached the episode in Greatest Gen where they first mentioned it. Your recipes are stellar and your videos are awesome

I did it Mr. Adam! I followed your recipe here (used buttermilk and baking powder) and they came out relatively good! Perhaps a bit too thick but they made for some hearty pancakes. This was my first time fully preparing breakfast for my family and I doubt I would’ve been comfortable enough to go through with it if it weren’t for your attitude words cooking and your easily digestible information here. I'm hella skeptical of simplisafe, because the industry is filled with Bullshit. Sure, the product may work well NOW, but what in 2 or 4 years? Will they stop updating the firmware/software? What will happen if the company goes belly up? Will they take responsibility if it turns out their product is as leaky as a sieve? We probably won't like the answers.

My experience with many school & church pancake breakfasts is to use a non-stock griddle and no butter or Pam. The color is very even and it is less mess. We’ve had issues with uncooked batter in the middle, thus we generally use a thinner mix.

Here's my trick for telling when pancakes are done: feel the surface and push on it a bit. If it's fragile and brittle and feels like it may crack, it's not done, but if it's nice and spongy, it's cooked through. This is because the harder, cooked/browned part is in itself fairly brittle, so with liquid batter underneath, it feels this way, but if the pancake is cooked all the way through, then it will feel spongy and squishy because there is cooked pancake to support the more-brittle browned surface.

I love your videos. So professional, yet not “slick”. I’m a little addicted lately, though I don’t really cook a lot. Anyway, I have to say that much like you say in your boxed cake mix video, it is my opinion that boxed pancake mixes, specifically Krusteaz (again, IMO), take the “cake”. I’ve had lots of pancakes in lots of places, and the pancakes that “I” make using Krusteaz beats literally everything else I’ve tried. Measure mix, add water, stir gently, stir in blueberries or bananas, and you have your mix. Insanely good. The only downside is it’s so good and easy that I have pancakes multiple times per week. I should buy stock in maple syrup. Thanks for the cool vids.

I wanted more griddle space but I didn't want to get another appliance, so I got a T-fal A92114 pan: 18" x 11" of non-stick flat top. It's big enough to straddle two burners on the stove top. Works great!

Ah, yes, the American version of pancakes. Here in the Netherlands our pancakes are more what you would call "crepes", but we call them pancakes here anyway. I'm intriqued about these American ones though, I wonder how this thicker, but smaller version of pancakes stand up to our dutch version and I definitely wanna try this sometime soon!

The wikipedia article on pancakes is a great read, everyone is different. Here in Sweden we also default to crepes as pancakes but we use berry jams (Lingonberry especially) for filling. Never had one of these thick pancakes.

English who's tried the American ones here (I think English pancakes are basically the same as yours). In my experience they're super dry, which is probably why they drown them in syrup.
