You don’t need to soak it before cooking pancit. You can use the stock to softened it which will make it softer you want enough liquid to soften the noodles not enough liquid is the reason why your noodles are still together. Pancit will never be soupy because rice noodles needs lots of liquid
Chicken or beef broth. I buy the large can of powdered chicken broth by Lee Kum Kee from Chinatown that has no msg. I never use the canned type. Too salty and expensive.
