Pandan Coconut Milk Custard Agar-agar Jelly Cake has a layer of coconut milk custard at the top and Agar-agar jelly at the bottom. The coconut milk custard is infused with pandan to make it more fragrant. The beauty of this Pandan Agar-agar jelly dessert is there is no need to do two separate layers to achieve this layering effect. After cooking, the Agar-agar jelly will automatically separate into 2 layers.

❤ Important update:
1. I used 150 grams of sugar because I don't like it too sweet. It may not be sweet enough, recommend to use 200-250 grams sugar. It does taste better when its sweeter.
2. The agar-agar packet I use is "Swallow Globe Brand" ratio is 10 grams for 1000 ml water. In this recipes I used 1200 ml liquid for softer texture. If you like the jelly to have more firm texture, you can reduce the water level by 100ml
3. Recommend not to use mould bigger than 7 inch by 7 inch wide. Based on feedback, if the mould is bigger, the pandan layer did not separate well. Also not to mini size mould. Apologies.
4. For the pandan layer to separate well, key steps:
use a whisk to beat the eggs so that it can mix well with the pandan juice and coconut milk
make sure the eggs, pandan juice and coconut milk are well mixed
when taking out half the agar-agar mixture to be poured into the coconut mixture, use a scoop
as per video so that the liquid cools down slightly and won't cook the eggs while pouring it into
the pandan coconut mixture
after adding the pandan and coconut milk into the pot, make sure it starts to boil before
switching off the stove
when pouring into a mould, use a ladle/scoop so that the custard/pudding layer is more
smooth
5. If the pandan layer don't separate well, if may be due to the coconut milk, if you use UHT, packet coconut milk, try Ayam brand for this recipe. I used it in my video and it turned out well.

Pandan juice: 20 pandan leaves (35 - 40 grams) + 100 ml water, room temperature
1 egg
200 ml coconut milk (santan), room temperature (Shopee Link: shope.ee/5pW0Z...)
10 grams agar-agar powder

200 grams sugar (in my video I used 150 grams but I think it might not be sweet enough)
900 ml water (if you like your agar-agar more firm texture reduce to 800 ml)

Hi you may find that the jelly is not sweet enough. I normally don't like it too sweet. So you may want to use 200 grams of sugar instead of 150 grams sugar. Also, the jelly for this recipe is on the softer side. If you like firm agar-agar texture, reduce water by 100 ml. I made it today n I think it needs a little salt to bring out the coconut flavour. Whenever we cook a sweet dessert with coconut milk, must add a little salt, be it bubur cha cha or pengat or kueh talam.

你好,有些比例不同, 你可以试试看加多2克燕菜粉。下次可以拿一汤匙倒入碗粒,放进冰箱,等5-10 分钟,如果成形就OK了如果不成形就加入多一点燕菜粉。首先燕菜粉惨一点糖混合均匀才加入就不会结块

Hi I tried your recipe but the 2nd layer is like only 10% of the thickness as compared to your which is about 30%. Not sure where I done wrong

I have tried your recipe for pandan coconut agar agar, but the jelly did not separate into two layers. Instead the mixture curdled evenly in the whole mixture. What went wrong?

Hmm 😅 ...not sure which part but there are possibly a few steps. 1. when you beat the egg, recommend to use a whisk so that the egg is well beaten and will mix evenly with the pandan and coconut milk. 2. after pouring the pandan coconut milk into the jelly mixture, make sure to bring to boil 3. when pouring the jelly mixture into the mould, use a scoop. I find that when I use the scoop/ladle, the pandan coconut layer tend to separate evenly. I think those the few things. Let me know your thoughts, thanks. 😊

Hi, if you use 11 inch square, the height will be 2.8 cm which is 80% of the height of the jelly in my video which is 3.48 cm. If you use 10 inch mould, the height is about the same.

Hi sorry to hear that. After you boil the agar agar mixture, scoop half into a bowl, then only pour into the pandan coconut milk mixture. The agar agar mixture might be too hot when you pour into the pandan coconut milk.

Hi for this recipe the jelly will naturally split to two layers the green layer on top and clear layer at the base but they stick together. Let me know if I answered your question

Hi, I tried making this for the second time. I turned off the fire after the coconut agar mixture boiled but the agar mixture looked cloudy, not smooth what is the reason?. I used pasteurized fresh coconut milk. Thanks

Hi the Kuih talam is to get one whole solid green layer. But the pandan coconut pudding the layers will split into two.

Hmm not tried any replacement but you can omit the egg it won’t be as fragrant. Just not sure whether the coconut milk portion will float upwards. Guess you can try ☺️

Hi yes its frustrating! I did that once but I managed to change it at the shop. Maybe can ask whether can change. If not Hmm 🤔 not sure if the orange has flavour , if it does then probably you have orange mix with pandan flavour. Not sure whether it taste ok. But if it doesn’t have flavour then it’s ok just that your base colour will not be the clear colour. But I still think if possible change to the clear colour

@@ruyiasianrecipes Update on my little experiment 🙋 The agar agar turn out great,the color is abit off,like pale green,but it didn't have 2 layer color like yours,just a thin orange layer at the bottom(guess the orange color is just coloring,it didn't affect the taste at all).But the texture and taste is perfect!My family love it so much,thank you for this amazing recipe🙆🙆

Hi sorry it didn’t turn out well. To be honest not sure cos could be due to many factors. But most likely after adding the coconut milk into the pot bring the mixture to a boil until the bubbles start rising to nearly the top of the pot

@@dorothylim8113 yeah after you add the pandan coconut milk into the pot, have to boil until you see the bubbles rise up like the video then switch off the stove. Sorry didn’t highlight the importance of this step in the video

Hi can I know how come there is water after placing the jelly in the fridge? The jelly has been removed from the mould and is placed in the fridge. I notice there's water develop in the plate around the jelly

Hi for agar-agar the jelly will release water overtime. If you want to minimise the water being released you can add gelatin.

For other jelly I've made such as chocolate etc there was no water released. Only for this pandan jelly it does. When I was using the blender using 100ml water added, it couldn't blend as insufficient water. After I add in another 100ml then it was able to blend. Could it be because of the extra water added? If put gelatin, how much do you think should be added on top of the agar agar powder?

I see chocolate has dairy so it will not release water. As for this recipe the coconut milk is plant based so it will still release water. Also if you have more water to powder ration then it will release more water. If you added 100 ml you can reduce 100 ml water when you cook the agar-agar powder.

你好, 这个食谱我没试过用椰糖,应该可以吧,但是我不确定那个香兰椰奶会分两层。甜度的话,开始加入少一点椰糖,然后可以慢慢加倒你喜欢的甜度。水量的话,如果喜欢硬一点可以减少100毫升水。希望能成功 😁

Hi someone tried the recipe without egg and its work fine. Just have to reduce water content by about 100 ml. Pandan juice + water = 900 ml.

Hi this recipe is from my aunt so I didn’t test much variations. But if you want more of the transparent layer then you can add more liquid and agar powder. Normally every additional 1 gram equivalent to 100 ml water. This is based on packet instructions of 10 g for every 1000 ml water

I live in England; might not be easy finding fresh pandan leaves. I have the paste which I brought when I went back to Indonesia years ago. Hi, may I know if the agar mixture height isn't tall enough after pouring into the moulds, it won't automatically be separated into 2 layers during the cool down process? Cause I used two moulds and the agar-agar layer in each mould is quite thin and didn't separate into two layers after cooling down 😭

Hi I’ve two questions; I tried to blend 20 chopped pandan leaves in my blender but it’s too dry soo I added another 100ml water in it, does it ruin the recipe? Cause it is not separating… should I have been using a food processor or maybe a smaller blades blender instead? When the whole mixture boiled at the end of it, I turn off the heat and did a few stirring before I laddled them carefully into my mould, could that be a bad mistake to stir and ruined the ability to separate? Oh I see , yup better to use a finer blender, the pandan juice helps in the separation, when its boiled it floats to the top. Secondly yes don’t stir after boiling 😅 after boiling just off the stove then slowly use ladle to pour into the mould. Sorry it didn’t turn out well. Hopefully it works next time

@@ruyiasianrecipes the reason I stirred was because I use a deep saucepan and I can se the green bits are floating on top and I am using tiny containers and I tried to get "even separation" by stirring hahaha... SO, is it i just slowly use laddle to scoop out from the surface into my containers?

(PLEASE ignore my first reply made a mistake ) Hi I used 10 grams for 900 ml water. So for your agar agar tali about 16-17 grams for 900 ml water. If you like it to have harder texture I guess you can use the whole 20g. Hope this helps ☺️

I made this but it didn't separate to 2 layers like yours. I added some salt though. My sister told me salt will cause separation. Not sure if that caused the failure. Will try again next time adhering strictly to your recipe. Thanks for sharing.

Hi there hmm 🤔 not sure about the salt because I also just followed the recipe from my aunt. But it shouldn’t affect it. It could be the pandan Essence instead or pandan leaves cos pandan leaves tend to float up when it’s boiled. But that might not be the issue. I think it’s the steps.

Try to follow every step in the video. A few key steps , like after heating up the agar agar mixture, use the scoop slowly pour half into a bowl first then only pour into the pandan coconut mixture. This helps to reduce the temperature before pouring it into the pandan coconut milk mixture. Also after pouring back the pandan coconut mixture into the pot, must bring the mixture to boil like the video. This step is important (apologies, didn’t mention it’s importance in the video) . Next important step when pouring into a mould must use a scoop/ ladle to pour in. This step also to make sure the layers will separate well.

Thanks for the notes! I used pandan leaves as I had some leftover from other recipes. Everything else is the same except for the salt.

Hi do you want to try this Brown Sugar Coconut Milk Agar Agar recipe ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-kPP97xW9bt4.html it also splits into 2 layers and its easier to do than the pandan version. And also more guaranteed to separate into 2 layer 😁 without egg it’s easier to separate
