Ingredients 材料:
[ Starter 发种 ]
125g cold rice (冷饭)
1 tsp crushed wine yeast (敲碎酒饼)
1/2 tbsp caster sugar (幼糖)
1/2 tbsp cold boiled water (冷开水)
[ Dough Starter 糕种 ]
160g rice flour (粘米粉)
130g cold boiled water (冷开水)
100g starter (发种*)
[ Syrup 糖水料]
2 pandan leaves , knotted (2片班兰叶, 打结)
400ml coconut water (椰水)
230g caster sugar (细砂糖)
[ A ] Mixed Well (拌匀)
250g rice flour (粘米粉)
30g corn flour (玉米粉)
30g tapioca starch (木薯粉)
300ml pandan water (6-7 pandan leaves blended with 300ml water)(6-7片班兰叶加入300毫升水打烂)
*100g fermented dough starter 糕种
[ B ]
1 tbsp oil (油)
1 tsp alkaline water (碱水)

Yes, totally agreed. I've tried so many of her recipes too, and all the results I get make me very happy & satisfied. She's the best baking tutorial so far. In my opinion, she is very honest in terms of teaching newbie's like me👍👏💪. May GOD keep watch & bless you always Mdm. Kathrine 🙏🙏🙏

Hallo Top Chef.. Recioi kamu bagus dan lengkap, tetapi hendak ambil masa.. 48 hrs +12 hrs +12 hrs yang panjang, lebih baik beli sekeping rm 1.2. ,lebih cepat kerana takut yawa pendek tak dapat makan kueh kamu ..ok.. Gd job thank u. !

I just made this Pak tong gou , tastes so nice but not perfect yet. It doesn’t rise till the top but happy already. Is high heat can be the reason? One thing I forgot to put the oil . I don’t use alkaline water to my liking I like the sour taste of Pak tong gou .will try again with my left over dough starter. Thank you for the detailed steps and the recipe

What is Alkaline water? Can we use reguler yeast? What do u mean by cool boiled water?

as long fermentation, it would taste a little sour, so you add a little alkaline to get neutral. Bake baking soda at 90 C for half hour for alkaline powder. You do not need alkaline if you don't mind a little sour taste.

I'm also a moslem,I'm from Indonesia. As long as I know rice wine yeast isn't haram. We call it ragi in Indonesia and we use it to make sweet fermented gluten rice(tape).

vinoto After fermentation, there will be sourness, so add alkaline water to neutralise it.

like sourdough starter, feed it with some flour, water before using, then keep in the fridge, it will be always good with your little care. I had been baking the bread with this Chinese sweet rice wine starter, nice.

when the dough starter halfway left ,at part 1;26 , mix 160 rice flour /130 ml water , leave out of the fridge about 6 to 10 hrs , depend on your house temperature ,have fun

@@KathrineKwa Hi Kathrine. Wouldn’t this be too strong of 1 tsp baking soda + 1 tsp water? Not only that these both together don’t even add up to 1 Tbsp of alkaline water that we needed.
