One of the best Italian pastry chefs Alfonso Pepe from Pepe's Pastry Shop located in Sant'Egidio del Monte Albino (SA) presents the step-by-step recipe video of the traditional handcrafted "panettone".
Ingredients
1st dough:
- 800g flour 0 w 360-380
- 300g sugar
- 420g water
- 100g yolks
- 300g butter
- 250g natural yeast
Total weight: 2.17Kg
Process
Melt sugar in hot water, add the flour, let rest for a while, add the natural yeast (see recipe), egg yolks, let get it consistent. Add the butter cream, let rise in a cell at 30° for 12-14 hours until the dough swells to up to three times its volume, proceed with the 2nd dough.
2° dough
- 200g flour 0 w 360-380
- 150g sugar
- 100g orange honey
- 220g yolks
- 10g salt
- 300g butter
- 200g orange pulp
- 12g panettone flavors
- 20g orange flavors
- 1.20g vanilla beans
- 600g Sultana raisins
- 300g candied orange cubes
- 150g candied citron
Total weight: 2.26Kg
Take the dough that was prepared on the previous day and place it in the machine with the flour, let it get consistent, add the sugar, make sure the dough is always consistent and add the honey, flavors, salt, butter, yolks and eventually the fruit. Let the dough rest for 20 minutes.
