How does Papa Louie get the employees he gets by chance? Simple: He bugs the houses of bored, lonely or depressed people and notes down what their interests are, what they're good at cooking at then baits them with their interests and forces them to cook. This explains why the employee you play as can run a whole entire kitchen without aid of any coworkers.
