Part 2 - 6 More Full Days Of One Person Meals - Seeing How Far $80 Can Stretch
Day 2:
Breakfast: Egg and Cheese Biscuit
Lunch: Chicken Salad Melts
Dinner: Sausage Fried Rice
Day 3:
Breakfast: Hashbrowns and Waffles
Lunch: Turkey Smashburger Sliders
Dinner: Turkey Pot Pie
🥧 Pie Crust:
1 Cup flour
3 Tbs Margarine
(Cut the margarine into the flour)
1/2 tsp salt
1/4 cup cold water
Mix remaining ingredients together and roll into desired shapes. Brush surface of pie crusts with a beaten egg and bake at 375F until golden brown (about 40 minutes for the items made in this video).

🍪 Snickerdoodles:
3 Tbs margarine
1/4 c sugar
6 Tbs Flour
1 Tbs Egg
1/8 tsp baking soda
1/4 tsp salt
1/4 tsp vanilla extract
For the coating - 1 Tbs sugar mixed with 1/2 tsp cinnamon
Preheat oven to 375F and mix all ingredients (except the coating) until well combined. Form dough into 1 inch balls, roll to coat in cinnamon sugar mixture, and place on parchment paper on a baking sheet. Bake for about 12 minutes or until edges of the cookie and bottom are a golden brown. Enjoy!
🍞 Orange Marmalade Loaf:
1/2 cup flour
1/4 tsp baking soda
1/8 tsp salt
2 Tbs orange Marmalade
2 Tbs egg
1/4 tsp vanilla extract
1/8 tsp cinnamon
2 Tbs oil
1 Tbs sugar
Mix all ingredients together and pour batter into a greased or lined 3×4 mini loaf pan. Bake at 375 for 35 minutes, or until a toothpick comes out clean or with crumbs on it. Allow to cool and enjoy!
Day 4:
Breakfast: Sausage Egg And Cheese Biscuit
Lunch: Turkey Hot Pockets
Dinner: Pizza
Day 5:
Breakfast: Biscuits And Gravy
Lunch: Chicken Quessadilas
🌮 Soft Tortillas:
1 cup all purpose flour
1/4 tsp salt
1 Tbs oil
1/4 cup warm water
Mix well, then form into small 1 inch balls for fajita sized tortillas or 2 inch balls for burrito size tortillas. Roll extremely thin, then place in a hot skillet and flip once bubbles appear on one side. Once both sides have small brown spots appear, place on a plate with a tea towel cover to enable them to steam and stay soft. Enjoy!
Dinner: Meatloaf Meatballs and Roasted Carrots and Potato Sheetpan
Day 6:
Breakfast: Pancakes and Fried Potatoes
Lunch: Chicken Salad Wrap
Dinner: Sausaged Rotini and Brocolli
Day 7:
Breakfast: Egg Biscuit and Mandarine
Lunch: Mini Grilled Cheeses and Tomato Soup
Dinner: Chicken and Dumplings
