Pasta Carbonara with Leeks & Lemon

This take on pasta carbonara is an old favorite. It's from Martha Stewart's Everyday Food magazine (Remember that little guy? It was such a good one.) and I have been making it for nearly a decade now. It is loaded with leeks and lemon, and though it may not be especially traditional, it is delicious and not at all heavy or rich tasting.
If you want to make it vegetarian, use 3 tablespoons of olive oil in place of the bacon.

Do I have to turn off the stove when adding the egg?, thank you for sharing this delicious pasta recipes.

You can turn it off or keep it on low! Lots of people over the years have worried about the egg getting cooked, so I encourage them to stir the sauce into the pasta on the stovetop over low heat for a minute or so. If you are not worried about the raw egg, then you don't have to do this.

Saving pasta water for reheating never occurred to me! Does it force the leftover pasta to give up/release sauce that it soaks up? This looks yummy. Time to pull some leeks from the garden! ☺️

Hello! And so sorry for the delay here. The reserved pasta cooking water is more flavorful than water and it's starchier, so it will lend a creaminess/more emulsified feel to the sauce. If you forget, you can simply use water, but again, the starchy pasta water will be a little tastier. Jealous of your homegrown leeks!

@@AlexandraStafford hi! No worries. Secret …leeks are fairly easy. I multi-sow them in cell packs and then just transplant all the seedlings together in holes once they’re about pencil thickness. See @Charles Dowding for reference. No dig gardening. I hope you’re enjoying the autumn!
