Italian pasta salad with dried tomatoes, rocket and vinaigrette sauce tastes absolutely great. The Mediterranean salad is quick and easy to prepare and looks great too. Everyone loves it!
Pasta Salad Salad Ingredients
350 grams of pasta
350 g cocktail tomatoes
1 jar of sun-dried tomatoes, in oil
1 small Jar of olives (170 g drained weight)
100 g arugula
1 bag of pine nuts (50g)
200g feta cheese
6 tablespoons oil from the tomatoes
2 tbsp balsamic vinegar
1 tbsp mustard
salt and pepper to taste
Preparation Italian pasta salad with rocket and sun-dried tomatoes
1. Cook the pasta al dente and leave to cool.
2. Chop the cocktail tomatoes, dried tomatoes, feta and olives and mix with the cooked and cooled pasta.
3. Make a vinaigrette of your own taste from the sauce ingredients and mix with the salad. Pay attention to the intensity of the oil from the jar of dried tomatoes.
4. Mix the feta cheese into the salad as well.
5. Wash the rocket, roughly chop it and mix with the salad just before serving.
6. Finally, briefly roast the pine nuts in the pan and place on the salad.
7. Before serving, season again if necessary and refine the ratio of oil and balsamic vinegar further if necessary.
