Pastilla (Moroccan Chicken Pie) 🥧

Pastilla (Moroccan Chicken Pie)
Ingredients
- 3 brown onions, diced
- 2 tbsp olive oil
- small pinch of saffron
- 1 bunch flat-leaf parsley, finely sliced
- 1 tbsp Ras El Hanout spice blend
- 1/2 tsp turmeric
- 1 tsp cumin
- 2 tsp cinnamon
- 1 tsp freshly ground black pepper
- salt, to taste
- 1 whole chicken
- 120g (4 oz) slivered almonds, toasted
- 6 eggs
- 2 tbsp melted butter
- 1 packet filo pastry
- 1 tbsp icing sugar
Method
1. In a large pot with a lid, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the diced onions with a pinch of salt. Sauté the onions slowly until they are softened.
2. Place 1 ice cube in a small dish and sprinkle the saffron on top. Let the saffron steep as the ice cube melts.
3. Add the finely sliced parsley, Ras El Hanout, turmeric, 1 teaspoon of cinnamon, and freshly ground black pepper to the sautéed onions. Stir well before adding the chicken breast side down.
4. Spoon some of the onion and parsley mixture over the back of the chicken, then add enough water to the pot to half submerge the chicken. Cover the pot with the lid, reduce the heat to low, and slowly cook the chicken for an hour until just cooked.
5. Remove the chicken from the pot and place it on a wire rack to cool and rest.
6. Once the chicken is cool enough to handle, shred all the meat from the carcass.
7. Add the saffron water to the pot used to cook the chicken. Stir well before adding the eggs, mixing them in thoroughly.
8. To assemble the pie, brush a pan with melted butter and layer in 3-4 sheets of filo pastry, ensuring they completely cover the bottom and sides of the pan.
9. Add just over half of the chicken mixture on top of the filo, followed by half of the toasted almonds. Then layer 2-3 more sheets of filo pastry and brush with butter.
10. Add the rest of the chicken and almonds on top of the second layer of pastry. Add 5-6 more sheets of filo, folding all the edges in and brushing with butter as you go.
11. Bake the whole pie in a 180°C (350°F) oven for 30-40 minutes until the filo is golden brown and crispy.
12. Mix together the icing sugar with 1 teaspoon of cinnamon.
13. Turn the pie out from the pan, then dust the top with the cinnamon icing sugar mixture. Optionally, use a hot skewer to mark a cross pattern on the top.
14. Slice and enjoy!

​@@nunyabidnes6010There's a difference between simply following a recipe and knowing why/exactly how you do things certain cultural ways. Andy (and restaurant chefs who create the menu in the first place) are of the latter variety. And they are indeed in the relative minority, compared to the chefs who blindly follow recipes created by the higher-up chefs. Any chef can toast X, Y and Z spice without knowing what it actually adds to the dish, sure, but they often mess up when trying to extrapolate it over to another similar but different dish.

@@E_Don I disagree with you too. A recipe alone (first find the right one) is no guarantee for understanding the regional cuisine. Cooking is not a purely mechanical process. A pinch too much or too little is within the tolerance range of a recipe, but it can change everything.

Since you're more familiar with the dish, can I ask you a question? I've seen some versions of Pastilla made with medjool dates. Is that wrong, or is Andy just making a different version?

@@victorrenoux34There are no dates in the traditional authentic Pastilla. Pastilla can also be made with sea food but the chicken Pastilla is the most prepared in Morocco. I love it. The taste is epic.

Yes, this is one of my top 3 favorite dishes in Morocco!! He did it full justice and it looks delicious! Cool technique with the hot rod on top to caramelize the sugar and cinnamon!

@@StrikerEureka85 traditionally you infuse saffron into hot water (kind of like preparing tea), but putting them on ice is a slower infusing method. I think with this slow infusion method you can get a stronger aroma from it

​@@pOOkiNG79 i believe most if not all moroccan regions have pastilla (or bastilla) although with slight modifications specific to each region. It is usually consumed in festive occasions. A common example would be having pastilla as the first course of a wedding meal, which usually has 3 or 4 courses. There's also a seafood version of it, and the country is divided on which one is best. Note that chicken pastilla can range from slightly to very sweet. I personally prefer chicken over seafood pastilla, and i like it when it's barely sweet.

I had a Morrocan friend in college who taught me to make this, her dad was a chef there, and it blew my mind. As someone who grew up on meat and potatoes white people food, the flavours blew my mind. Really set me on the path to learning to cook varied stuff.

This is one of my favourite dishes on earth its so delicious. When I had it in Morocco it was with squab (pigeon) and the sweet notes and spices work really well with the gamey flavour. If you have access to a game bird ofnsome sort this is the perfect dish to use it in.

I've never seen this way of doing Chicken Pastilla (I'm from a morrocan familly). We do not have a layer of dough in the middle, but we have 3 layers of filling : 1- the minced chicken with a spoon or two of the remaining sauce before adding eggs 2- The remaining sauce with eggs and fresh persil & coriander 2- Almonds that have been boiled, skin removed, toasted or deep fried, crushed and mix with powdered sugar or honey Great to see this version !

Nearly every time you cook, out comes the onions. I love it! I'm the same way though never in your expertise zone. I love cooking for my husband and I. We also get local produce and fruits, Palisade Peaches are a local treasure.

im moroccan and yeah you’re right, im sure it tastes fine but there are quite a few changes he made here compared to how we typically make bastilla - even accounting for the slight variations across the country. he either intended to put his own spin on it or didn’t do enough research
