The micro spots are called nucleation sites, they help separate the gaseous CO2 that's trapped in the water without having to go through a state change such as boiling/freezing/etc. As usual, the Mythbusters explained it well in an episode, if you're more curious.

@@honeydewdrop Yeah, I think it's unrealistic to try and make things like Mentos, Skittles, etc. where you really need specialist equipment like taffy pullers and candy panners. Better if they let her stick to things like the Snickers and Twix where there's at least some hope of a) replicating it, and b) improving on it to make an actual "gourmet" version

Yeah someone really needs to tell her (and take the pressure away) that it's not necessary to aim to recreate the same thing and THEN improving it. You can improve it by making your own thing. Like i wouldn't bother with the size or even form. I would've just rolled it into a sausage and cut it in pieces! Just using good ingredients that were not created in a lab is enough for me
