Wow this is the first time I've seen someone make the sauce kinda like my mom does. Mom would boil the chilies a little first with garlic then would blend all of it together with the water for her sauce. Also she would heat then fry the tortillas before putting them in the sauce. yummy

My mom did the same...... I see 2 way controversy.... Fry Tortilla to wilt in oil then dip in sauce ....... Dip in Sauce then fry in oil. ( to me that does not seem logical ).

I like more the "not-so-healthy" version!!! Frying the tortillas once you soak them in the salsa!!! But having a healthy version is always helpful!!! :)

I always tend to modify recipes. Living in Louisiana, we love to sauté veggies. So I am thinking I will sauté the veggies to put on the top of the enchiladas ;-)

Of course, anybody who says Mexican food in not healthy . They think Mexican food is only taco bell and chile with carne y the greengo burritos, real Mexican food is more than that.

the disappointing aspect of mexican cooking is the lack of vegetables used. it would have been more nutritionally sound to include a filling of cauliflower or broccoli or corn or asparagus. Mexico has one of the largest obesity rates in the world. Because the cuisine is very meat and tortilla and cheese based. Pati, please do something about this. I know adding verduras would not be so authentic but for the sake of the health of Mexico and the United States try to add more vegetables for a more nutritionally sound cuisine.

A lot of Mexican staple ingredients are vegetables such as corn, squash, variety of chili peppers, beans, tomatoes, and onions. Mexican food is recommended for weight loss patients along with Asian foods. The poor in rural Mexico tend to live on vegetables and grains, the poor in the U.S. tend to live on fast food and cheap processed "foods". Mexico's obesity rate is due to the wrong methods of cooking, considering that changing certain methos whilst still using the same ingredients, one would be able to make nutritious food. Example, instead of a fried tortilla , just heat in on a skillet. Instead of using lard, use oil. Instead of using more meats, use more legumes. Instead of drinking sodas, drink more natural juices (something that Mexico has much of).

@@bhs3871 i realize this as i am one of the poor people from Mexico you refer to. 1 of the issues you miss is the meat based diet (the diet of wealthy people) versus a vegetable based diet (the diet of poor people). The Aztecs and Maya ate a lot more fruits/vegetables than modern day Mexicans do. Mexicans got caught up in the high class culture of the Spanish and to this day a meal in Mexico with no meat dish is not considered a meal. A meal of tortillas and beans is considered begger food. But if you add chicharron to a bean taco, it is suddenly a delicacy. A lot of the vegetables you mentioned are not the vegetables i am talking about but rather starches (potatos) or spices (onions/ dried peppers). They are also cooked beyond any nutritional recognition. Onions cooked in pozole for 45 minutes or tomatoes charred then put in a blender then simmered to reduce water content (and vitamin content). Mexico is a huge grower of broccoli (which is mainly all exported to the U.S.) How many recipes have you seen Patty make using non cooked tomatos or non cooked guajillos? Lastly, Mexican food is most definitely NOT recommended for weight loss. Not sure where you got this fallacy. Cuisines high in lard, fried foods, cheese, sugar, and meat based are not scientifically proven to be conducive to weight loss.

@@ovh992 You cannot assume all people cook the same in Mexico. Mexican food is recognized worldwide by UNESCO as World Patrimony. It is up there along with French, Japanese, and Mediterranean. There is nothing wrong with chicharron once in a while. But if you have it every day in big portions of course it will be a problem! Starches have supported civilizations since the beginning of time and have ALWAYS been a staple food. Rice in Asia, corn in Mesoamerica, bread in Europe. Mexican food and Asian food is recommended for weight loss, they are healthier than American and it is easy to make vegetarian dishes with Mexican food. You have all sorts of grains, vegetables, and an innumerable amount of sauces you can make with Mexican staple ingredients. Que no sepas hacerlo es diferente.

O V H you sound very ignorant . Mexican food at it’s core is very healthy. I recommend you read the book “Decolonize your Diet”, where it talks about how European influence changed Mexican food. In an episode of Pati’s show she casually addresses how when Enchiladas Suizas were invented (by two Americans in Mexico) they became a huge hit, because at the time no one was cooking like that with lots of cheese and cream etc. Mexico’s Obesity rate has occurred because they have adopted the American diet (SAD) full of process foods; hamburger, fries, and hotdogs rival tacos in Mexico.

i've watched a lot of ur videos and i can say almost are wrong. like this 'enchiladas', miss garlic and vinger in the salsa de huajillo. and carrots and potatoes are fried with a litter salsa de guajillo. and the most important: tortillas must be fried with salsa de huajillo. 'couse u made a weird enchildada with a fresh salad topping. lol.
