Real ice cream with real pear flavor.

Sugar syrup and puree
4 dl water
3 dl white sugar
0.5-1 dl freshly squeezed lemon juice
750 g of pears
Glass Batter:
4 egg yolks
1 dl white sugar
2 dl milk
1 1/2 cup full fat cream
½ tbsp Vanilla sugar.

Mix water, sugar and lemon juice in a saucepan and cook for a few minutes. Peel, halve and core the pears. Place the pear halves in the boiling pan and simmer for about 15 minutes. Let the pears cool in the law.
Pour the syrup through a strainer.

Whisk together egg yolks and half of the sugar. Boil milk, cream and the remaining sugar.
Whisk the warm milk mixture into the egg mixture. Pour the batter back into the saucepan. Heat up to 85 degrees celcius and stir the batter all the time.
Sieve through fine mesh strainer. Add the pear pulp and vanilla sugar as well as a few drops of green household color if desired. Allow the batter to cool before running it in the ice cream maker or setting it in the freezer. Run the mixture in an ice cream maker or set in the freezer for at least 5 hours and stir occasionally.
