So if I understand this right: she wants to transport the animals in the minecarts like they're on parade floats. When the minecarts go past the machine it should also light up and make music. And given the past results of animal / villager testing in her other machines, she definitely should have used a more common animal as a test subject.

It's not. The minecart are placed on Slime block, after she turn on the switch, they will start jumping in sync.
