A longer video than I intended, but I wanted to discuss the ins and outs of a pellet grill in a little more detail. I'm certainly not an expert, but wanted to share my observations, experiences, opinions so far in this new process.

Meat stops retaining smoke at 135 degrees. The faster your internal meat temp gets to 135 the less smokey the food taste. That's why slow and low is good for a good smokey taste meat. Also prep food day before and place meet in refrigerator to lower the temp of meat, thus also taking longer to get an internal temp of 135. After 135 temp is reached start ramping up temp to get to the correct temp of food, then build your bark.

Someone who just got a pellet grill last weekend, this video was very informative. And as far as lazy goes, im sorry id rather not stay up all dadgum night using a stick burner, im getting to old for all that.

My smoker has a P setting that adjusts pellets and thusly smoke. Mine is preset at 4 and I haven’t changed it because it works good, but I do have the option.

Great Video ! One thing I noticed with my Traeger is that lower temps tend to cause more smoke. I usually set a smoke time when cooking say for example ribs 3 hours smoke, 2 at 225, and then 1 I crank to 275-300 or bring to my other grill. It seems at the lower temp you get more smolder and the burn off if not as fast so there tends to be a lot of smoke. I would like to try the Grilla or the Pit Boss any one with a flame broiler. I may get the Austin XL reasonably priced to add on. Keep the videos coming!

I enjoyed this video. I just did my first smoke on a Pitt Boss Copperhead. I used their competition blend pellets. Will different pellets, apple, cherry, hickory make a difference in the smoke or just the flavor?

If you think you're getting too much smoke you can always wrap your meat in foil/butcher paper to create a barrier. A lot of bbq'rs cook for color first, then wrap and take to final temp.

My pellet stove does the same thing, smokes like crazy when you start it then you don't see very much smoke. We burn corn after we get it going, corn burns hot, pellets not so hot. Pellets in the spring or fall weather.

Hi I just got a pittboss XL1000 an had read also to keep actual temperature is to take out the burning plate that lays over top burner is that true ? An I’m going to do a 11 pound brisket on it what be the right temperature to start it out on was thinking a low temperature ? An like to know if could bump the temperature up after couple hours or keep it steady at one temperature through the whole process an if could spray meat with water every so often or is that a No no. Thank you

Great video. I like all your videos and your real talk. Telling it like it is .. ...with some of the recent questions....wow on some of the questions.....Its almost like, maybe they dont even need 1 lol. You had me rolling with the video on all the algorithms,computer devices and wires coming out of the recent video you watched and you said it look like Frankenstein and it was hooked up on life support! Silverbac Alpa equipped with a P.I.D controller is now available. You may have already made a video on P.I.D controllers [ A proportional-integral-derivative controller is a control loop mechanism employing feedback that is widely used in industrial control systems and a variety of other applications requiring continuously modulated control.] Less smoke, but a very precisely maintained and constant temp not allowing for temperature fluctuations as found in when we just smoked meat. If you haven't done a video of it maybe something you can look into I haven't had chance to look at all your videos thanks again for all the videos you have produced

Thanks Tommy. Up until this past week I have always used BBQ'rs Delight or Grilla Grill pellets and have enjoyed them. I recently used some lumberjack pellets and I really like them as well. I recommend finding a pellet that you like and sticking with it. Many people who have problems with flame outs and stuff change pellet brands like they change their socks. Find one that you like, and stick with it is my advice.

Jus' Piddlin, is there a minimal fill amount required in hopper for system to start fire in box? thanks

There is no minimum fill line or anything in the hopper. You need just enough to get the fire started and maintained for the length of cook that you want. With that being said, I usually keep mine at least half full...........just for kicks I guess.

My Broil King Pellet Smoker has a damper on its chimney. When the grill gets to the desired temp I close it to what I think it should be. However when I do that the temp goes down and the grill has a hard time to get back up. Would this be when I close the damper too much on the chimney or would it be due to the pellets I am using?

Closing the damper will decrease air flow. I don't think you should try to control the temp with the damper. That is what the controller is for.

Burning wood is burning wood. Don’t matter how you do it. I make Q on my MAK that rivals a stick burner. Got people out there with Guru’s on their grills, so let them scoff at the pellet grill. Technology is always changing. The end result is the quality of the food. I love my Pit Barrel and love my Weber Kettle to boot. All depends of how I am feeling and what I feel like cooking on.

What pellet brands have you've been using? So far I've used Gourmet BBQ, Pit Boss, LumberJack, and Cookin Pellets. So far Cookin Pellets are my favorite because the smoke tastes great and it produces less dust. LumberJack has the biggest ranges of pellets but it's dusty.

Can you not set The pellets setting on that grill. My pit boss has A P settings I can speed the pellets up or slow them down for more smoke or less? During a cook Just curious brother God-bless.

The Hot Rod or igniter is on a timer. The timer is only initiated once when you turn on the pellet grill power... The timer only stays on long enough to initially ignite the pellets within the fire pot... That's the reason if you sustain a flame out you'll have to turn the pellet grill power off and then back on to reinitiate the Hot Rod or ignitor to reignite the pellets again.

If you get too much smoke your meat will taste bitter, that's why a lot of folks wrap their meat in foil after it reaches a certain internal temp.

after cooking for 9 or more hours a brisket does fire pot fill up to top with ash? how do you clean out fire pot

I cooked a boston butt for about 8 - 9 hours, but there was very little ash in the fire pot. Make sure you are using a quality pellet and shut it down properly. I just used a shop vac or vacuum cleaner to clean it out. Hope this helps.

I hear ya man! I have heard of them, and I think they are a quality product ( I have never used one personally). I would probably buy one of those over say a GMG or PitBoss. Just my opinion. Thanks for checking in.

Great questions John. Both are possible. My fire rod is still hanging in there and I am 2 years in. I haven't had a jam yet, but I know that it does occur.

Adjust your P settings to adjust for smoke and dial in the accuracy of the heat.

The Grilla, as well as other grills with more modern controllers, doesn't have a P setting that the customer can adjust. New controllers that Traeger is coming out with doesn't have that available anymore either.

Great informative video. I just had one question. Is the heat pretty evenly distributed throughout the grill or do you get "hot spots"? FYI, I've never used a pellet grill so forgive me if it's a dumb question. Keep up the great work and grilling.

Hey Sandy, nice video. New subscriber. I have owned a Traeger for three years and I love pellet smokers. One way to get less smoke also would be try a different wood, like apple, alder, etc. I think out of all the woods I have used, hickory gives the strongest smoke. I have been looking at the Grilla smoker, not the Silverbac. What is your opinion on that one. I like the uniqueness of it. Very different then all the rest. Like your channel!!

Rick Short Hey Rick. Thanks for watching! Accurate take on the different flavors of pellets brother. I think the other Grilla pellet smoker would be outstanding as well, with a smaller footprint! Same technology with a different design, and same great customer service! I truly wouldn't hesitate to pull the trigger on either one! Cheers!

how long does it take to get up to temp? (400 degrees). Also, how good is it at maintaining a set temperature.

I've never timed how long it takes to get up to 400 degrees but I would estimate about 20 minutes. There is a temp swing, which I like because it allows smoke throughout a long cook. With that being said, the avg temp is pretty close to what you have it set at.

I have a pit boss 440D. My fire bowl is not in the center of the grill, it sits off to the side towards the hopper. How much of a difference will that affect my overall cooking? Like, if I do a brisket or a pork butt, will I have to rotate it 180° half way through the cook?

Thanks for the comment! Buy a can of biscuits (pillsbury) at the store. Space them out on your grill in an even pattern, cook them as directed on the can, and see if some cook unevenly. This will tell you if you have any hot spots on your grill.

Mark R I love the grill. So far I have cooked country style ribs, tbone steak and burgers. All were better than I expected! I'm going to either cook a pork butt, or a brisket this weekend..... I highly recommend this grill!!!!

Super late with this comment but pitboss claims you'd need 1000W during startup (ignitor) and 100W for the control board and auger.

Thanks for your comment Kris. I haven't, but I have noticed some have been using a char pellet from Lumberjack Pellets. I usually save the charcoal for the weber kettle or watchman stove. Cheers!

Its smoking because when it gets cold its dumping pellets in and cooling off the burn, so it smokes more. Like dumping logs on an almost out fire, the grills that hold temp keep consistent on the pellet feed so there is less smoke, but a nice clean burn. Sometimes too much smoke gives a bitter ( nasty ) taste, light smoke will still give a nice smoke ring.

You need to switch the tittle to “Pellet Grill for Dummies”. Good video Anyways when I first heard of them I thought it was stupid lol, there is now way it could be as good as charcoal. Having one now I don’t understand why people buy charcoal grills. The only down fall to a pellet grill is that yes you need electricity but when do you not unless your out in the sticks.

There is a hot rod in the firepot that stays on approximately 4 mins (depending on the manufacturer) that ignites the pellets. After the expired time, it shuts off. At that point, the only thing producing heat and smoke is the wood pellets. Thanks for the question.

I think that is more of a personal preference. If you love charcoal flavor, then you might be disappointed. If you are looking for a mild - medium wood smoke flavor, then yes. I like having the ability to switch back and forth between the two.

Your house thermostat doesn't hold the constant temperature either it will vary a total of about 5° (plus or minus 2 or 3°)... Same thing is happening with pellet grills...

well buddy you just forgot one thang their inside in the fire box is a small glow rod that light's the pellet's in the grill it controls the heat once it's hot it cut off until it's time to glow again.

Well buddy you are right in the fact that I didn't mention the hot rod in this video, but it was somewhat intentional due to the fact that this video was intended to relate a pellet smoker to a stick burner because neither has a "heating element" that provides the heat or smoke. The hot rod is only used for start up. Once it cuts off after a set time per the algorithms, it does not cut back on during that cook. So I didn't want people confusing the hot rod with a heating element. No need to use a smoke tube,I just set my smoker on smoke setting and do a 3 hour smoke it works great this way good smoke flavor and smoke ring

Excellent just got it cooked 3 briskets were out of this world in 6 hrs have 300 gal propane smoker cook for 16hr this saved me all night adding wood every three hrs watch temp no sleep good taste but a lot of work people don't know what it takes to make a good brisket

I'm not a lazy man I can not get the signal from my brain top my hands , telling me to check the fire box and keep wood in the fire to make sure to keep temp right.

Who would want less smoke tho? Folks that are stick burner purists chafe my hide! I got a buddy that didn’t understand pellet grills. After a few cooks at my place, he’s now a believer.

Good question Bill. Yes you can....actually did steaks Thursday night. It took about 20 mins. Depending on the steak thickness of course. I have also done steaks on it with cast iron skillets and they turned out great as well.

Bill Ray just raise the heat on high to sear the steak, then lower the heat to smoke (bake) it for 25-30 minutes, or you can just cook it on med/high and just cook it to your liking

Sir, yes you can control smoke. Please do some more research before you just post things. Wood only smokes when it’s at low temps or unless it’s wet. Hence the reason there is no need for water trays or soaking pellets.

Daniel Thornton Sir...while the level of smoke changes from lower to higher temps, wood always gives off smoke when burning. Please take a science class before commenting on someone’s video. Because of the swing that the controller purposely creates on this pellet grill, you get smoke at any temp because it loads the firepot during the trough of the swing. Please do some research on how this controller works before just posting things. Thanks for your comment.

Goody07 I am aware that it is actually the chemical reaction of wood burning and the myoglobin in the meat under a certain temp that causes the smoke ring. Trying to keep it simple here. What do s the name of your channel so I can check it out? Thanks for watching.

It's really simple, on't complicate things. Pellets only smoke at a certain low temperature. How to get it to stop smoking? Turn the heat up FFS! Stop confusing people with cords and stick burners and all your other BS! Turn the heat up and keep it simple!
