Kenji brought me here talking about the irony. There is indeed some irony in him shitting on all the pizza in America and proceeding to make BBQ Chicken pizza.
As a french guy, I can tell you not to go to a french pizzeria. French food is out of this world but the only cuisine that we can cook is the french one. If you want to eat a good pizza, go to Napoli and that's it !
I met him at an airport lounge once and was lucky enough to strike up a conversation. I asked him what the best steak is and without pause, he immediately responded "Outback Steakhouse". I was like "really? the chain?". He said, "Yes. The have it down to a science and you can always rely on them to get you a great steak and its not expensive." Good guy.
He says all the pizza in the US is crap then proceeds to give instructions like, you can do whatever. Top notch Italian American pizza crushes what he made.
If you ever come across a French restaurant that makes pizza, run a mile. Unless they're Italians. Not Germans, obviously. This guy is famous because his joint is filled with movie stars and their agents. Nothing else.
D3FS3 actually Ed LaDou introduced the BBQ chicken pizza to CPK when helped them develope CPK's first menu. If you're wondering who Ed Ladou is, he was the first pizza chef at Wolfgang Puck's Spago restaurant. So in otherwise, Wolfgang invented the BBQ chicken pizza and CPK help make the pizza famous.
I love the way he tells so much none sense. 1 mentioning south of France as the best way of making pizza ( when there is many styles and types which I equally respect and appreciate) 2 Not using either southern France classical ingredients and techniques. 3 being highly pretentious and blind towards all the talents that especially in the U.S. has been growing and growing in many ways and styles.
He uses pre-cooked chicken? He puts in a good word for KC Masterpiece? And yet we're supposed to take his criticism of NYC and Chicago pizza seriously? Smh
