In this video our host Albert Howell learns how to make the perfect chocolate mousse from our expert Andrea Buckett.
INGREDIENTS
1 cup chocolate chips
3 whole eggs
1 cup 35% cream
INSTRUCTIONS
Melt chocolate chips over double boiler.
Add the 3 eggs to the chocolate chips and whisk continuously until well combined. Set aside
Meanwhile, whip cream until soft peaks form.
Once the chocolate egg mixture is cooled slightly, begin to fold in 1/2 of the whipped cream. Add the remaining whipped cream and fold until well combined.
