Ingredients:
2 cups sliced onions
1/2 teaspoon minced ginger
2 to 3 chopped green chilies
10 chopped mint leaves
1 sprig curry leaves, chopped
1/2 teaspoon salt
1/4 teaspoon turmeric
1 1/4 cup besan
1 1/2 tablespoons rice flour
1/2 teaspoon ajwain
1/4 teaspoon salt
1/4 cup cashews (optional)
1/2 teaspoon garam masala (optional)
Instructions:
1. Mix onions, ginger, green chilies, mint leaves, curry leaves and salt in a bowl.
2. Squeeze the onions a couple of times so they begin to release moisture and set aside for 5 to 10 minutes.
3. Sprinkle the turmeric, besan, rice flour, ajwain and salt evenly over the onion mixture.
4. Mix everything well, then add 2 tablespoons of water at a time to make a moist dough.
5. Heat 1 tablespoon of oil in a pan until very hot, then pour it into the dough.
6. Mix the dough with a spoon, then heat oil in the same pan for deep frying until medium hot.
7. Take small portions of the dough and gently drop them in the oil.
8. Fry on a medium heat stirring occasionally for even frying.
9. Fry the onion pakoda until golden and crisp, then remove them to a colander or kitchen tissue.
