I don't understand why it was deep fried. Pan fried in shallow oil would have been enough to brown. Especially when it becomes soggy after simmered with lid covered. Big fan of your videos by the way.

Hi can I use black bean garlic sauce instead of fermented bean sauce? Also can I use chicken thigh meat instead or do we need the bones to make it flavourful?
