Ah yes, I call this the Belgian method as my dad says they came up with it. (He IS Belgian so hooray patriotism lol) Fry once on low heat for the soft almost fluffy inside, then again high for a crispy, crunchy outside!

The real way is you dont wash the fries in water you want to keep the starch.. Then you boil it a first time in beef fat at 140 celsius degree until cook at heart then let it rest And reboil it at 170 celsius degree And then you have the perfect french fries like how they were invented and how belgian are doing it... Never listen dumb american chef if you want to know how to cook for real..
Normally its 140° celsius for 15-20 min Then put out the fries up the temprature to 170° to finish it. And you take for potatoes the variety call Bintje
If your not sure what kind of glass container you have, use plastic containers or let it slightly cool down, from super hot to the immediate chill, might crack your glass container

Bro, I just tried these and I confirm these are the best. Mine were crunchy even after 30 mins of frying. And Maybe an unpopular opinion but these are pretty easy to make. 🔥

You don't really need the ice bath, regular tap water and cook it. Depends how big you want them. The rest is basically the same. Being Michelin star chef for 10y, you don't really want to overdoing things, reason some people getting tired of making foods at home. I always teach people to skip unnecessary part, because the results is mostly the same.
Followed these same steps for my fries and it was awesome. Had to use an air fryer though. I just cooked at 400 degrees for 30 minutes, shaking every 10.
