You also need to take care not to add too much saffron as that can take over as well. Also extra virgin olive oil does not go well with spices. You need to use cooking olive oil or sunflower. You should make sure the spice mix is well rubbed in so it doesn't burn. And lastly, why not put the pastachio nuts in for five minutes at the end to toast them?
Wonderful dish, I eat chicken 3-4 days a week. Hope ya don't mind, I will use atleast a bulb of garlic cloves, pealed, and thrown into the bake...along with three onion with all that rice, maybe some red and yellow bells. You just wiped your hands with the towel, rather than washing your hands after fingerfking the chicken, shame on you.
