In Delhi, Turkman Gate, I have relished special DHAGEY WALEY KABABS...only one chap PROFESSOR makes it in a small hole in the wall type shop at evenings. These kababs are actually bound with fine thread and they fall apart like keema when you remove the DHAGA...but taste is DIVINE! In Lucknow, I have seen kababs infused with smoke by putting them in an enclosed upturned pan with coals!😂
