Persian pasta or Macaroni is a pasta dish made in a different way than regular pasta. Here’s what you need to make this unforgettable dish:
1 large onion
1 pound ground beef ( I used 90% lean)
500 grams angel hair pasta
1 tablespoon salt
1 teaspoon cayenne pepper
1 tablespoon paprika
1 tablespoon onion powder
1 teaspoon onion powder
2 tablespoons good quality tomato paste
Olive oil or avocado oil for sautéing
3 small potatoes sliced
You have to sauté onions first until golden, then adding meat and spices. You have to keep sautéing until you reach a dark brown color on meat, then add tomato paste and occasionally stir to avoid burning the meat. You have to do this until you reach a dark red/orange color on the meat.
Add pasta to the boiling water and cook it for 7 minutes. Preserve some of the pasta water for the sauce and add it to the meat. After arranging the sliced potatoes , add pasta and sauce mix and let it cook for 35 minutes on medium low heat. Serve with yogurt or salad.
