I love Phil's teaching style. It reminds me of when I was a kid. My grandparents, or other old folks who were friends of the family would teach me their skills in the same way. It's funny though, because as a child I would think, how many times are they going to repeat those instructions to me? Looking back on it now, I am sure glad they did. Our attention spans as children are short, and so it takes repetition to make it stick in our memories.

I bought some last year and this year it’s awesome. I think Phil’s might be better , cause it’s darker than what’s online. They probably thin it out to make more jars. I would love to try Phil’s.

Worked the garden and fruit trees and vines my whole childhood. My parents never bought vegetables or fruit from the grocery store and it was hard hard hard work for my mom and dad along with us children. At the time I hated it but today when I can 40 quarts of tomatoes and 30 pints of different jelly every year I appreciate what they taught me in the 70’s and 80’s it’s a healthy lifestyle.

Vacuumed a small tube of mayhaws this morning, have several gallon bags in freezer. Wife is starting the jelly making this morning. Lost my Mayhaw once to Katrina, but it put back out from the roots and the tree made it through Ida, and gave a good yield this year. I use a small sears shop vac with two lengths of hose and a 6’ section of plastic pipe to pick up everything under the tree.

I’ve eaten Mayhaw jelly all my life. I’m 75 yrs old. My grandmother taught me how to gather them from the “Mayhaw Pond”. Just like you do, except we spread sheets under the sheets & I’d climb up in the tree. I still make the jelly & some syrup every year. They are tiny berries. The Mayhaw is a Hawthorne that fruits. It used to fruit in May, thus, Mayhaw!. The Mayhaw is indigenous to the Deep South only. A true southern delicacy!. Everyone loves it.

I killed my first duck in about 1952, and my first goose in 1953. That will be 70 yrs ago in December. But I grew up further south in Texas and we have alkaline soil where mayhaws do not grow. My mother grew pomegranetes she grew from cuttings she got from relatives in Denton County, and she made jam that put all the mayhaw jelly I ever tasted to shame. I told that to the owners of Treesearch Farms in Houston, twenty years ago, and behold: pomegranates are now being sold on the Texas Middle and Upper Coasts.

I do it a little different. But same process. I put the mayhaws in the cheesecloth and boil them in the cheesecloth. Smash them during the boiling process. Then I put the cheesecloth in the strainer. Once it cools down a little, I start twisting the cheesecloth until all of the juice is gone. It’s not as big of a mess and I get more juice out of the fruit. I use this recipe for strawberry. Cherries, blueberries, blackberry and whatever fruit you want. I even did watermelon once.
