What I cannot understand is, why you mix minced fish paste to meat dishes. Does it give extra flavour. Have you ever tried omitting the fish paste. It is just a suggestion, don't be offended.
Fermented fish or prahok is a traditional Cambodian ingredient. If not overdone, it adds a salty and umami flavor. You can replace it with salt but then you lose the savory depth of the flavor.

Just look at countries such as China or India where rice is a staple food and countries such as the USA where rice isn't a staple food, which countries are plagued by obesity and which aren't?? The myth that rice fattens you was claimed by "researchers" who were funded by big industrial wheat or maize farms, of course wheat and maize are fierce competitors of rice. Modern research has debunked this myth.
