The only reason I did was just to follow the recipe. I’ve canned other things like spiced peaches or red hot cinnamon apples where they are left in the jar. Hope that helps!!
I’m glad you asked!! If you cut the tops completely off, I’ve noticed that the beet will bleed more, or lose a lot of the juice in them. Once you’ve boiled them, the skins will peel off and then you can cut the top off as you slice them for in your jars. Hope that helps!!
