Hi guys welcome. On this video I'm sharing on how I make my pickled jalapeños with carrots and onions. Hope you really enjoy this recipe.
Ingredients:
8 Jalapeños
6 Carrots
6 Garlic Cloves
1 Medium Onion
2c White Vinegar or Apple Cider Vinegar
2c Water (3c of water if you don't like the strong taste of vinager)
1/2tbs Oregano
1/2ts Sugar
1tbs Coerced Sea Salt

I used to go to a mexican restaurant to get burritos JUST so I can take about 2lbs of this stuff to eat the burrito with. This would be the main dish, and the burrito would be the side dish.

For me that is a necessity! Every single time I visit a taqueria I grab a ton of those, especially the carrots 🥕! I even buy the cans and have the lil Mexican plastic container that strains them.

@@skinnybuddha8988 Well now there's no excuse:) use the recipe, and you can mix and match with veggies too, like cauliflower! you can make the recipe your own just like i have by tweaking here and there, like for instance, i added bay leaf and peppercorns to it!

So this is all me and my brother had to do to my dad pickle jalapeños he bought from store 😂😂😂 When I was 7, my father told us to stop eating only the carrots and eat the jalapeño also but we didn’t listen 👂, one day he went to work and me and my brother ate all the carrots in the container until we realized there was no more, shocked to know that our father will be back from work , we went back in the fridge, took out some fresh 🥕carrots, my brother was the chief tht cut them in pieces and I was the one who dumped them all fresh into the container😂(thinking about it now is just so funny, what a kid brain we had) so after I dumped it all in we both decided to eat it again until we realized that it tasted more fresh carrot thn the one that it had before. We were disgusted.. so we both looked at each other like “ Oops..” my brother had the guts to still leave the carrots in the container with the pickle jalapeños and juice, back in the fridge the container went. We just waited for our father tht day .... 😏

I just ran out of my jar of organic sliced Jalapeños tonight so I searched for a video of how to make them myself -- and found yours. I was so inspired to make them that I called three different stores looking for organic Jalapeños. Hot peppers are on the "Dirty Dozen" list of the most sprayed vegetables (with pesticide) so I wanted to find organic ones. I found them at Natural Grocers, went home, followed your recipe/instructions and made a batch. I Can't wait to try them. Thanks for the recipe!

There are two types of Oregano, use the Mexican varity as it makes a difference. 1. Mexican Oregano is a Mexican native and a relative of Lemon Verbena. Mexican oregano has a light refreshing smell and a slight citrus lemonish taste. 2. Mediterranean Oregano is the one most commonly found at the supermarket. It is a member of the mint family with its own light pungent smell and most often is used in Mediterranian area dishes.

I made this yesterday, haven't tried it yet, It's mellowing in the frige for awhile before I do. I didn't have Jalapeños but I did have Hungarian hot peppers I wanted to try. Wow! that was probably a mistake. My hands were on fire all the rest of yesterday from handling the peppers. I never have this issue with Jalapeños. I did remove the seeds and pith with bare hands. I hope the cooking and pickling tones them down a bit. great recipe!!

I did make Your recipe today It was very easy and it taste delicious I will be using it Saturday with Carnitas for my granddaughters graduation party. Now if you have a recipe for white rice with a tent of green in it I believe it was That I tasted one of my students parents was the most delicious rice I don’t know what she had in it but I know it was a little tent of green And a little bit of lime and Some kind of pepper green pepper. Thank you for sharing your recipe. Your video made the recipe so easy to follow the and it tasted so good. It took me back to a favorite restaurant of mine that I frequented 30 years ago and served pickled jalapeños and carrots with every dinner. We always finished the jalapeños before our dinner came, but the server would always bring more. Your recipe is delicious - a classic!!!

Hi K&J, I have few questions for you. 1. Is that Mexican oregano you are using? I've seen it in bags at the grocery store. 2. I already have a big bottle of Bragg Vinegar, will that work? 3. I like the carrots a little al dente, should I just cook the other ingredients first for say three minutes then add the carrots last? 4. Will it be less spicy if I remove most of the jalapeno seeds? I like spicy, but not TOO spicy or I'll be chomping Tums all night long. 😉 The Taqueria nearby us makes these and I love their picked carrots just as much as their tacos and burritos LOL! Thank you for sharing your recipe. I look forward to making this recipe very soon.

MeowEwowE Hello, answering your questions in order. 1. Yes 2. Yes, you can use bragg apple cider vinegar 3. Yes, or even the last two minutes 4. Ive tried doing pickled onions before. Do most pickled dishes like this require pre-cooking? Subscribed btw

Thanks, pre cooking it’s an option. If not precooked they will be crunchy it all has to do with each individual choice. You can also pre cook them in lime for an hour then remove lime juice and add the vinegar and water and let sit in fridge for at least two days.

Cook the carrots first and the onions last so not to over cook them. But otherwise not bad at all.

The carrots can come out crisp. Just cook them for less time. It all depends how you like them.

No. I make small quantity. This recipe is finished within a week in our home. Hope to pressure can in the future.

We made our first batch.. turned out better than expected. My wife is from Mexico and she loved the recipe. The only thing missing is cauliflower. I don’t miss it but the wife thinks it should be added to the recipe. Still love the recipe !!

Ok quick question .. I’m going to make a batch today with out the help and supervision of my wife... how much sugar and salt do I add? The wife used the good old taste buds to judge if and how much was needed.

It’s a side and can be eaten with anything it’s a decision every person has to make and combine with what they think tastes good with.

Hmmm looks really good I have a question tho. Is the Oregano something traditionally added? I must say I have been getting tired of buying canned Peppers when I grow boats loads of them.

They are pretty close in comparison. Better flavour with homemade. And the best part to me and family is there's way more carrots🥕 The stuff from the store barely has any carrots👎

do u have to cook the veggies, is there any way i can just pickle it without cooking it like just putting the vinegar and other stuff in a jar and just let it sit there in the fridge

tacoho3 Hi, yes you can. Put all the ingredients minus the jalapeños, onions and carrots in the container of your choice then mix together final step add the veggies and refrigerate at a day before eating. Hope you enjoy :)

It’s a gamble with jalapeños. Sometimes they are very spicy and others aren’t. But definitely not use serrano pepper those tend to always be spicy.

Something like this can last for a long time in the fridge tightly sealed. But the longest I've had them is two months and they were still good. I store in glass container. Thanks :)

Depends on the amount of jalapeños and carrots you are making. If you’re making as much as I did. 1 cup vinegar 3 cups of water if you’re not too into te taste of vinegar. If you are 2 cups of vinegar and 2 cups of water.

Hi thank you for the recipe! They came out great but I keep getting an orange oily film on top - is that normal? I’m assuming from the oil . Do you get the same ? Maybe cause I used olive oil
