So awesome to see this! I knocked my own version together after having been to a Mexican restaurant. The waitress caught me spiking their dish with my homemade dried habanero powder and gave me "the frown". I explained I not only like the heat but love the flavor of habbies. She said put away the powder, that she would be right back. She came out with a dish of pickled red onions with fresh sliced habbies in it. Cleaned out the whole dish, it was fantastic! My version didn't get peppercorns or oregano. Also all lime juice, just a little salt and a bit of sugar. Great on sandwiches (hot dogs and sausage are killer), of course tacos, burritos and enchiladas, sometimes I just use 'em like salsa on tortilla chips. A 12 ounce jar might last me 2 weeks.
