Hi Nagi, can i prepare the dough (with all the waiting time) the night before and then just bake everything in the morning? Will it do any harm to quality of the dough?
No to step on Nagi's toes here. There is a Pide recipe where the dough only rests for 30 minutes available on the Turkish RU-vid channel called Refika's Kitchen. Try that dough with Nagi's fillings.
Pide is definitely closer to pizza than lahmacun. Even the words "pide" and "pizza" are similar. There is nothing called "Turkish pizza" in Turkey. It's just a term coined together, for foreigners I assume. Lahmacun will never have cheese in it, and will only have minced meat, parsley, peppers as toppings. The dough of lahmacun is very different to pizza; it's very thin. Whereas pide can have different topics, and can have different shapes too; canoe shape like in the video, closed like a calzone, and round like the typical pizza.
