She's not trusting him. She's dropping an infertile egg that would have went onto the ground if his hand wasn't there. If it wasn't infertile, She's likely very inexperienced. She would have made a nest to lay and would have been protective with her partner around. I had doves drop eggs mid flight. Would come out to 3 or 4 eggs at the bottom of the aviary. Hopefully she wasn't scared of prevented from laying in her nest if she did make one. They can do this when that happens as well. When the egg is coming, it's coming. Either way, this is not a show of trust.
The pigeon is denied to enter into its nest. So the bird could not keep away from laying the egg. So it did so. There is no question of trust. Eggs of pigeons used for competitions are collected likewise and allowed to hatch by ordinary species of doves; or incubated and reared.

Eggbound female birds eventually die unless they are assisted in time for this reason. Also, both parent Pigeons will refrain from pooping while sitting on the nest, and those who are close to their wild instincts will try to get as far away from their nest as possible before relieving themselves. Fostering to other pairs of Pigeons is usually done only with very valuable Racing or exceptionally high quality fancy Pigeons, or those breeds such as Oriental Frills or English Pouters, that are poor or unreliable parents. Pigeons are rarely hatched in incubators like Chickens, ducks, quails, and Turkeys, because their squabs are incapable of feeding themselves forwell over a week after hatching. They also require constant brooding for their first week of life, unless the temperature stays very hot. There are artificial substitutes now available for the "Pigeon Milk" that their parents produce and feed to them, but it is much simpler to let foster Pigeons at the same stage of their nesting cycle hatch and raise them. Newly hatched squabs will not thrive on or eat grain, and cannot digest such food. Parent Pigeons also produce antibodies to protect their young against disease which they pass to them in their Pigeon Milk. No artificial food for newly hatched Pigeons provides equivalents for these.
